A warming rice dish, traditionally cooked in layers of basmati rice and marinated chicken in classic Biryani spices. I’ve taken influence from both sides of the family for this one, but what they agree on is having some cooling raita alongside for a different temperature and texture to help balance out the dish.

- large onion
- boneless chicken thighs
- plain yoghurt
- toasted flaked almonds(optional)
- pomegranate seeds(optional)
Our 30 minute recipe
Bring a lidded non-stick pot, 2/3 full of water, to the boil then add the rice. Let it simmer uncovered over a medium heat for just 7-8 mins, then drain and rinse under cold water and keep aside. Meanwhile, do Step 2.
Heat 2 tbsps of oil in a wide, non-stick pan over medium heat and when hot, add the onions and let them fry for 5-7 mins, stirring occasionally until golden brown. (It could be time to drain the rice now.) Remove a spoonful of fried onions from the pan to keep aside for garnish later on.
Add the chicken and the Garlic Paste to the onions and stir-fry for 3 mins. Add the Biryani Paste and fry for 2 more mins. Put 1 tbsp of chopped tomatoes into a small bowl and then tip the rest of them into the onion pan and fry for 2-3 more mins. Sprinkle in the Bombay Spice Mix and fry for 2 more mins. Then turn the heat right down and slowly add in half of the yoghurt and mix in and simmer for 2 mins.
Layer the Biryani: Rinse out your rice pot and then put half of the rice back into it. Ladle your chicken curry on top of the rice in the pot, then spoon the rest of the rice on top of the curry. Cover it with a lid and let it cook on the hob over a medium-low heat for 10-15 mins.
Meanwhile, add the juice of half a lemon and the rest of the yoghurt to your bowl of reserved tomatoes and mix well. This will be your cooling yoghurt raita to have alongside. When the rice is done and the chicken is fully cooked, serve the Biryani onto plates with your raita alongside. Sprinkle with the reserved fried onions, toasted flaked almonds and pomegranate seeds (if using).

The ingredients list is not accurate. It specifies 200g yogurt yet only half need for recipe with rest for optional ingredients. Shopping list also includes a lemon yet no mention in recipe?

One of my favourites! Loved it. Doubled the amount of chicken and rice and added spinach. Came out perfectly with a nice crusty bottom.

Great taste and easy to put together. I did mix all the yoghurt in instead of half but when cooked in the oven it made it slightly more saucy and took the edge off the heat a little. Boom!

Amazing flavours, best yet. I just did it with normal rice, and didn't bother layering. Also, do turn it right down before adding the yoghurt as mine split, but didn't retract from the taste

Was lovely and I used the tip and baked it in the oven. Could have done putting a bit of sauce on the top instead of just the rice but still lovely!

It's nice but has a lot of stages to it that's too much of a faff. There are other chicken dishes that are much tastier and more straight forward.
