Developed by popular demand, our version of Chicken Katsu Curry is finally ready! “Katsu” is a method of breadcrumbing in Japan and can be used on meat, fish and even vegetables. In Japan they use panko breadcrumbs which are made from bread without crusts and allows for a much lighter, crisp coating. Curry was introduced to Japan by the British when India was still a British colony. Their version and accompaniment to Katsu has become so popular across the country that it is now a national dish!

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Katsu Curry Paste pot, a Gochujang Sauce pot and a Pickled Radish Mix pot. Our 25 minute recipe

  • 1.

    Heat the oven to 200C/fan 180C/gas 6 and then cook the rice according to packet instructions. Meanwhile, put the Pickled Radish Mix in a bowl with 2 tbsps of water and mix well. Add the radish slices, toss to coat and put aside.

  • 2.

    Put the breaded chicken on a lined baking tray and cook in the oven for 20 mins, (or as per instructions). For the sauce, heat 1 tbsp of oil in a non-stick lidded pan over medium heat. Add the onion and carrots and then cover with a lid and cook for 5 mins to soften them, stirring occasionally.

  • 3.

    Stir in the Katsu Paste and the coconut milk. Bring to a boil then reduce the heat to medium and cook for 5 mins. Add 1 tsp of the Gochujang Paste to the sauce and mix in. Put the rest of the Gochujang Paste into a small bowl and stir 1 tbsp water into it to make a drizzling sauce.

  • 4.

    When the chicken is done, slice it into strips and place alongside rice and some steamed green veg (if using). Ladle the Katsu curry sauce over the chicken and serve with the pickled radishes alongside. Drizzle the Gochujang sauce over the rice and sprinkle with spring onions (if using).

  • 5.

    OPTION: If you want to make your own breaded chicken, follow these steps after Step 2: Lay out 3 bowls, one with flour, one with a beaten egg, and one with 4-5 tbsps panko breadcrumbs (or crushed cornflakes). Lightly flatten each chicken fillet and coat in the flour, then dip into the egg and then coat with breadcrumbs. Heat 1-2 tbsps of oil in a frying pan and when hot, add the coated chicken fillets and cook for 5 mins on each side until golden and cooked through.

Meal 3 from my simply cook trial box, 'Chicken Katsu'. A really tasty dish, actually really enjoyed the pickle radish side dish, really gave the dish a nice lift. And the hot sauce had just a nice little kick to it. Yet again I had to alter my serving, as I'm on a vegetarian diet for a month for cancer research uk veg pledge. So instead of breaded chicken I used No Bull burger co - "No chick fillets", and they worked so well, very tasty and a great and easy way to turn this meal into a veggie friendly dish. As for the meat lovers, was told by my other 2 diners whom I served the meal as intended, they also very much enjoyed it and was devoured in minutes. Definitely a recommended dish. 4/5 ????
