With roots in Punjab in Northern India, rumour has it that the famous Moti Mahal restaurant in Delhi designed this delicious curry. Also known as “butter chicken”, this dish is traditionally made by cooking the chicken in a hot oven (or tandoor) and then simmering it in the curry sauce which is then garnished with fenugreek leaves.

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Butter Chicken Spices pot, a Makhani Curry Paste pot and a Fenugreek Leaves pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Chicken Makhani in just 20 minutes.

- boneless chicken thighs
- plain yoghurt
- Basmati rice
- large onion
- double cream
- butter (from cupboard)
- a cucumber(optional)
Our 20 minute recipe
Heat the oven to 200C/fan 180C/ gas 6. Put the chicken pieces in a bowl with the Butter Chicken Spices and half of the yoghurt. Mix well and then arrange the pieces on a baking tray and cook in the oven for 15 mins, flipping them over halfway through.
Meanwhile, cook some rice according to packet instructions. Heat 1 tbsp of oil in a large pan over medium-high heat. Add the onions and and fry for 5-7 mins until they start to go golden.
Add the Makhani Curry Paste and mix well. Pour in the passata and stir it through. Bring it to a gentle boil and let it simmer until the chicken is done. While you’re waiting, you can prepare your cucumber and tomato salad now (if having).
Put all the chicken into the curry along with the Fenugreek Leaves and gently stir. Turn down the heat to low and add the butter and the cream. Stir well, letting the butter melt into the sauce and become glossy.
Serve the rice with the Chicken Makhani curry on top with the salad on the side (if having) and a spoonful of the remaining yoghurt.

This is the first of the four boxes I cooked and whilst I have always thought that cooking a from scratch curry would be difficult, I was very wrong. The instructions were easy to follow and the additional ingredients were easy to get hold of. Would happily recommend this to anyone!

Was a bit heavy on the raw, pure passata taste at first, so I added a spoonful more of butter and a glug more of cream and the improvement was lovely, made the flavour a little more cohesive. Definitely recommend putting the spoonful of yoghurt on for serving, was quite lovely. Portion size wasn't huge, which is ok if one of you has a smaller appetite than the other, like me and my husband.
