The kofta concept is so delicious that versions of it are ubiquitous across North Africa, the Middle East and Northern India. Our take on koftas are lamb kebabs seasoned with a middle eastern blend of warm spices which are grilled and drizzled with pomegranate molasses. They’re served with our style of the Turkish ‘cacik’ dip of yoghurt with garlic, mint and diced cucumber all on toasted flatbreads with a crunchy salad.

Our 25 minute recipe

  • 1.

    Season and shape the mince

    Heat the oven to 200C/fan 180C/gas 6.

Put the lamb mince in a bowl with the KOFTA SEASONING and a pinch of salt and mix thoroughly.

Split the mixture into 8 equal chunks then shape them with your hands into rugby ball shaped koftas.

  • 2.

    Bake the koftas

Put the koftas on a lined baking tray and cook in the oven for 25 mins.

Meanwhile, mix the CACIK PASTE through the yoghurt and add the chopped cucumber. Keep aside.

  • 3.

    Finishing touches

When the koftas have had 20 mins, take them out, drizzle the POMEGRANATE MOLASSES over them and toss them in the glaze, then return them to the oven for 5 mins, or until cooked through.

Next, lightly toast the flatbreads/naan breads to warm them up.

  • 4.

    Serve!

Spread some yoghurt sauce onto your toasted breads, top with lettuce leaves, onion slices, parsley (if having) and your glazed koftas with the juices from the oven tray. You can pick this up, wrap it up and eat it, or you can enjoy it with a knife and fork, it's up to you!

I couldn’t actually get lamb when I cooked this so ended up getting beef instead. It was ok, the yoghurt mix was nice with it and it wouldn’t have been do good without this.
