Our 20 minute recipe

  • 1.

    Heat the oven to 220C/200C fan/gas 7. Marinate the lamb chops with the Masala Paste and set aside. Bring a pan of salted water to boil and par-boil the potatoes for 3-4 mins. Drain and let them air-dry in the colander for 1 min.

  • 2.

    Put the potatoes onto a lined baking tray and sprinkle the Spice Blend over them as evenly as you can with a pinch of salt. Drizzle 2 tbsps of oil onto them and toss to coat. Bake for 20-25 mins, or until golden. Now continue with step 3.

  • 3.

    Toss the red onion and tomato slices with salad leaves, if you have some, and arrange on plates. Swirl the Mint Chutney through the yoghurt in a small bowl.

  • 4.

    Heat a frying pan over medium-high heat and fry the lamb chops for 3 mins on each side for medium rare. (You shouldn’t need oil but feel free to add some if it’s getting dry). Stand them up and fry them fat-side-down for 1-2 mins, then remove from heat to rest them.

  • 5.

    Serve the lamb chops with some potatoes, salad and a spoonful of mint yoghurt on the side. Squeeze a lemon wedge or 2 over your lamb and salad and sprinkle over some chopped coriander leaves if you have them.

Really delicious, my partner and his Mom loved it. I used Lamb Steaks rather than Chops just because the chops in the shop were a bit too small, and the steaks worked just as well. Added to oven for 5-10 minutes to cook through better as they were thick. I will order again when back in stock.
