Mexican Bean Chilli

There are as many theories about the origin of "Chili" as there are versions! Some say "chilli parlours" started up in Texas, and by the 1920s these sheds serving tasty but affordable chili were to be found in every town all over the west of the USA! We've taken this great dish and put a twist on it with baked beans! Our Chipotle Paste spices up the beans which works well with our smoky paprika blend.

  1. 1 Bring 550ml of water to the boil in a lidded saucepan then add the Beef Stock and mix it in. Add the rice and bring it to the boil then turn the heat down to low, cover, and let it simmer for 10-12 mins.
  2. 2 Meanwhile, heat a little oil in a large pan over medium-high heat, then fry the onion for 3-4 mins. Add the red peppers and fry for 2 more mins. Add the Smoky Chilli Blend and cook for 1 more min. Add the beef mince and cook for 5 more mins, breaking it up with a spoon to help the meat brown.
  3. 3 Tip in the baked beans and the Chipotle Paste and mix well. Then reduce the heat to medium and let it simmer for 10 mins.
  4. 4 Serve the chilli over the rice with some soured cream on the side.
