Folded flour tortillas are filled with cumin and chipotle spiced beef and black beans, oozing with melted cheese. Griddled until crispy, these quesadillas are best when paired with the traditionally zingy 'pico de gallo' salsa and dipped into a cooling Mexican BBQ style soured cream. A family favourite taken to another level by the classic sides, this is an all-round flavour sensation of different tastes and textures.

Our 30 minute recipe

  • 1.

    Cook the filling

    Heat the oven to 160C/fan 140C/gas 3.

Fry half of the red onion in a pan with 1 tbsp oil for 3-4 mins to soften.

Turn up the heat and add the beef mince. Fry for 3-4 mins, until lightly browned.

Add the QUESADILLA PASTE and half of your chopped tomatoes and mix well. Let it cook for 5 mins.

Tip the black beans in (if using).

  • 2.

    Make your condiments

For the salsa, put the other half of the red onion into a bowl along with the rest of your chopped tomatoes. Mix in the PICO DE GALLO SALSA and keep aside.

For the dipping sauce, stir the MEXICAN BBQ SAUCE into the soured cream and keep aside.

  • 3.

    Cook the quesadillas

Heat a little oil in a large non-stick frying pan over medium heat. Place a tortilla in the pan and, on one half of the tortilla, layer grated cheese, then spread a spoonful of beef mince on top, ( add some of your salsa, if desired) then another layer of grated cheese.

Fold the empty side of the tortilla over to make a half-moon shape and flatten it down with a spatula.

Cook until lightly golden and crisp then flip it and cook the other side for 2 mins. Then place in the oven on a tray to keep warm while you cook the others.

  • 4.

    Serve!

Cut the quesadillas into wedges and serve with salsa, the dipping sauce and guacamole (if having).

I loved it, however my inner chef complained it was a faff to cook and said not to have it again. I will have to work out an easier way for him to cook it

The meat and salsa were good, the dipping sauce judged too sweet by the meat eaters in the house!

Laurence - May 09, 2019

Was ok... nice but not amazing

Didn't actually receive it!

Tracy - May 01, 2019

Really tasty

Melanie - May 01, 2019

Really lovely meal!

Adam - Apr 30, 2019

These would be great if not for the Pico de Gallo Salsa. There was an over powering taste of Lime which just ruined the whole meal for me.

Katherine - Apr 27, 2019

Tasty but not worth the effort

Lynne - Apr 25, 2019

Tasty- but quantities seem a bit wrong- I had enough mince to fill 8 tortillas but only salsa and cheese for about 3.

Laura - Apr 25, 2019

I used more mince than the recipe said as it wasn’t worth keeping just 150g of mince in its own. That meant the flavour wasn’t as strong as I would have liked. Better to figure out what to do with the extra mince I think lol!

Alisha - Apr 23, 2019

So good for lunch the next day cold!!

Sarah - Apr 20, 2019

Not nice, could make better myself. BBQ sour cream is awful

Charlotte - Apr 19, 2019

So tasty

Laura - Apr 16, 2019

I love this. Tastes incredible and really easy to make.

Wendy - Apr 16, 2019

Beef filling was lovely. Unfortunately the folding technique doesn't work and leaves beef mix all over the place. Ended up using it more like a nacho topping instead. Very tasty but very fiddly.

Louise - Apr 14, 2019

Delicious

Jason - Apr 13, 2019

Lovely

Caroline - Apr 12, 2019

Soo tasty! Husband said it’s the best one yet!

Josh - Apr 12, 2019

The dip was weird.

Rachel - Apr 12, 2019
