Mole (pronounced mo-leh) from Puebla, Mexico is traditionally a deep, rich flavoured one-pot with ancho chilli, chipotle and chocolate, which gives the sauce its dark colour. Our quick version of tender pulled chicken takes inspiration from the Mole sauce, making for a tasty burger  filling. The chipotle slaw adds crunch and colour to the toasted brioche bun and the paprika sweet potato fries tie it all together nicely!

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Mexican Seasoning pot, a Chipotle Paste pot and a Mole Sauce pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Mexican Pulled Chicken in just 25 minutes.

Our 25 minute recipe

  • 1.

    Heat the oven to 220C/200C fan/gas 7 and then bring a non-stick pan of water to the boil for the chicken. Put the chicken thighs in the pan to poach for 10 mins over a medium heat. Meanwhile, toss the sweet potatoes with 1 tbsp of oil and the Mexican Seasoning on a baking tray and roast for 20 mins.

    Meanwhile, put half of the Chipotle Paste into a salad bowl with the mayonnaise and stir well. Taste it, and if it’s too spicy, add some more mayonnaise, or if you want it spicier, add more Chipotle Paste. Then add the cabbage and carrots, mix well and put aside.

  • 3.

    When just cooked, remove the chicken from the pan and put on a chopping board. Pour away the water. Use two forks to "pull" the chicken thighs apart, roughly shredding them. Return the pan to the hob and heat 1 tbsp olive oil over a medium heat. Add the Mole Sauce, stir quickly, and then add the shredded chicken. Stir-fry for 2 mins and then add 50ml water to loosen the sauce. Then stir occasionally for 2-3 mins, or until the water has mostly been absorbed, then turn off the heat.

    When the potatoes are almost done, halve the buns and place them in the oven to warm up (cut side facing up). Assemble your bun by putting your pulled chicken mixture in and adding some chipotle slaw on top. Serve with the sweet potato wedges with extra slaw on the side.

A trick for the slaw. When you've made the sauce.... Cut some of the savoy and some Carrot then add abit at a time. They way you will make enough veg and still be saucey.

Loved it. Never boiled chicken before, never knew I could do that it really works. We used all the slaw seasoning so it had a nice little kick. Tip: we used 5 chicken thighs and it made so much pulled chicken I am glad I bought 4 brioche buns because we needed them.
