of sultanas (70g)
dried couscous (or quinoa for GF)
boneless chicken thighs

Our 25 minute recipe

  • 1.

    Turn the grill on to medium high heat. Mix the sultanas and couscous (or quinoa) in a medium sized, heat-proof bowl. Gently shake to flatten the surface. Put the Ras el Hanout and the Pomegranate Molasses in a large mixing bowl and stir together. Add the chicken and mix well to fully coat.

  • 2.

    Put the lemon wedges onto a baking tray, rind side down and grill for 8 mins or until the edges brown. While they're cooking, see the next step.

  • 3.

    Heat 2 tbsps of oil in a non-stick pan over medium-high heat and stir-fry the onion for 5 mins to soften. Add 100ml water to the onion to help it caramelise and stir until the water has evaporated. Add the chicken and cook for 3 mins. Add 100ml more water, bring it to the boil, then reduce the heat to medium low and let it simmer uncovered for 6-8 mins, stirring occasionally. (The liquid should reduce by around half.) Meanwhile, continue with the next step.

  • 4.

    While the chicken is cooking, boil 250ml of water in a kettle. In a small jug, mix the 250ml of boiling water with the Harissa Chicken Stock thoroughly. Then pour it over the couscous, making sure that the stock covers the top of the couscous. Cover it with a plate/cling-film, and leave it to soak for 5 mins. (If using quinoa for a gluten-free dish, cook the quinoa on the hob as per packet instructions, using your Harissa Chicken Stock instead of the suggested amount of boiling water.)

  • 5.

    Remove the cover from the couscous and fluff it up with a fork. Mix the mint leaves (if using) through the couscous and squeeze the grilled lemon over it. Serve the couscous in a bowl with a portion of Moroccan Chicken and a wedge of grilled lemon on the side with pomegranate seeds scattered.

Really tasty, subtle kick. Added cucumber to the couscous as well for additional freshness (plus it goes well with the mint) and it helps take a little of the heat off the chicken, which went down well with my youngest daughter (13). Very easy to make, my youngest did most of the work. Will definitely order again.

I don't like the way chicken thighs look, boned or unboned - I'd cut them until there is nothing left but clean meat, however, I need to get past this as once in the sauce they were very tasty and I enjoyed this dish, minus sultanas and with already prepped cous cous plus I only had limes but it worked nicely - am I a super cheat?
