This vibrantly flavoured salmon rub was designed with inspiration from SC's resident Norwegian, Halvor, who introduced us to this blend of ingredients. We've paired the salmon with refreshing dill pickled cucumber and the famous Swedish “Hasselback” potatoes, named after the Hasselbacken restaurant in Stockholm, where this style of potatoes was first prepared in the 1700s.

Our 35 minute recipe

  • 1.

    Prep the potatoes

    Heat the oven to 200C/fan 180/gas 6.

Put a baby potato on its side and make a couple of cuts a few millimetres apart. Don't cut right through, just 3/4 of the way down. TIP: Put potato on spoon to stop you going right through it, hold down on board and make slices)

Toss them with oil and the HASSELBACK POTATO SEASONING on a baking tray, then roast for 25 mins.

  • 2.

    Ribbon the cucumber

Meanwhile, peel long strips from the cucumber (discarding the skin), twisting it when you get to the seeds.

Put the DILL PICKLE MIX in a bowl with 1 tsp of water and mix well.

Add the cucumber strips and beetroot slices (optional) to the bowl and toss to coat. Keep aside.

  • 3.

    Bake the salmon

Sprinkle the SCANDI SALMON RUB over the salmon fillets and press it into the tops and sides (see tip).

When the potatoes have had 20mins, shake them and make some space for the salmon on the tray. Then put the potatoes and salmon into the oven for 8-10 more mins or until the salmon is cooked to your liking.

  • 4.

    Serve!

Serve the salmon and potatoes with the pickled veg alongside, and a dollop of crème fraîche for dipping.

The second time I used this recipe, we were trying to go 'low carb'. Roasted cauliflower in place of the potatoes worked wonderfully. Will definitely be ordering this kit for a 3rd time!

Kelly - Dec 09, 2018

A new favourite! Very tasty

Haydon - Dec 02, 2018

Only used half the seasoning so it could do 4 as suggested. Didn't try the dill pickle as hubby not a fan. Nice with some asparagus.

Anzela - Nov 11, 2018

Sally - Nov 09, 2018

Enjoyed the salmon the rub gave it a really nice flavour

D - Nov 06, 2018

Potatoes were great. The salmon topping was bit strong - didn’t go down well with kids. Not a favourite at all. Prefer the Indian/Asian and oriental dishes.

Marian - Nov 04, 2018

Found it a bit spicy for my tast

Thea - Oct 31, 2018

Salmon was very good, but salad was a bit plain

Mairi - Oct 25, 2018

Fiddly potatoes but so worth it!

Janet - Oct 25, 2018

Very tasty, & ample flavouring & garnish to cover fish & veg! I added Iceland’s king prawn flavour tails to go with my bag of 4 Iceland frozen salmon a plentiful size dish for two! ????

Sam - Oct 19, 2018

Delicious

Jeffrey - Oct 18, 2018

The meal I liked the least ... I am glad this wasn't my first meal. I would have never cooked another from the recipes.

Patrick - Oct 17, 2018

Far too salty.

Jill - Oct 13, 2018

Potatoes were especially nice

Dolina - Oct 12, 2018

Everyone enjoyed this dish, including the children.

Jeffrey - Oct 09, 2018

This was shocking . Because it wasn't a hot dish I cooked it for my kids. I didn't like anything about it . I am hungry, annoyed, send the kids to bed filled on pain au chocolate and the dinner went in the bin. This was the worse dish I cooked and I don't order from Simply Cook because I am a rubbish cook ... I want diversity but tasty food . At least I know Scandinavian food is not for us or was the recipe poor???

Sian - Oct 09, 2018

Fabulous! Love it, love it, love it!

Claire - Oct 08, 2018

Amazing!

Katherine - Oct 08, 2018

Loved this! Really easy and tasty

Kathryn - Oct 06, 2018

This was a tasty dish, if not a little on the salty side. The pickled veg was surprisingly nice, I added radishes & carrot to mine as not a fan of beetroot. As others have said the potatoes do take way longer than suggested but are worth the effort. Overall a completely different dish that I wouldn’t have tried otherwise, but was pleasantly surprised.

Alison - Oct 06, 2018

Loved the flavours of this dish.

Alice - Oct 05, 2018

Absolutely delicious

Rachel - Oct 02, 2018

Loved it!! Definitely restaurant style... will be having again.

Sarah - Oct 02, 2018

Salmon slightly overwhelmed by seasoning.

James - Oct 01, 2018

Yum! Loved the potatoes.

Adam - Oct 01, 2018

First go at that type of potatoes and would do them again. Salmon was tasty but I wanted a little more spice on mine. Will still order this again though

olga - Sep 29, 2018

excellent

Emma - Sep 29, 2018

Potatoes need longer or hotter.

Nicola - Sep 29, 2018

Lovely seasoning on the salmon and the potatoes were delicious!

Nicola - Sep 28, 2018

Really enjoyed this! Lovely seasoning on the salmon and the potatoes were yummy

Emma - Sep 28, 2018

Bit salty but very nice, would make again but not often

Laura - Sep 27, 2018

I made some extra veg as I didn’t think the salad would be enough. The potatoes were delicious, the salmon was really tasty and the dolop of creme fraiche was a lovely break in flavour!

Sandra - Sep 26, 2018

????

Chris - Sep 25, 2018

Salty..like you mama's breath

Christina - Sep 24, 2018

Not to my liking, unfortunately.

Jake - Sep 23, 2018

Potatoes were really nice and worth spending the effort!

Liz - Sep 20, 2018

Good

Jane - Sep 20, 2018

I found this dish salty and unpleasant although I liked the tip for cutting the Hassleback potatoes. The flavour of the salmon was masked by the rub. One for those who are less than keen on salmon perhaps.

Amanda - Sep 18, 2018

Really enjoyed this one again. If you have too much salmon rub, you can mix the rest in with the crème fraiche.

Claire - Sep 18, 2018

A bit salty but tasty regardless

Daniel - Sep 17, 2018

Far too salty unfortunately

Kath - Sep 15, 2018

Wish there wasn’t chilli in the mix for the salmon crust.

Sharon - Sep 14, 2018

Ok.

Sarah - Sep 08, 2018

Bit dull, not really anything special, could easily do that without help. Disappointing.

Nigel - Sep 07, 2018

Brilliant as always!
