Sicilian lemon and Italian herbs combine to create a crisp glaze for the roasted chicken breast, which is paired with a smoky Mediterranean style onion mash. Griddled baby gem lettuce adds freshness to the dish and a spicy paprika drizzle brings it all together to make a light and bright flavoured supper.

How Our Recipes Kits Work

We provide flavour ingredients:

  • Lemon & Herb Rub
  • Mediterranean Drizzle
  • Smoky Mash Mix

Your shopping list:

chicken breast fillets (or chicken legs)
large white potatoes
small red onion
baby gem lettuce
butter (from cupboard)
mixed olives (pitted)(optional)

Our 25 minute recipe

  • 1.

    Cook the chicken and potatoes

    Heat the oven to 200C/fan 180C/gas 6.

Rub the chicken with the LEMON & HERB RUB on both sides, then cook on a tray in the oven for 20 mins.

Boil the potatoes in a pan of salted water until tender, then drain.

Mix the MEDITERRANEAN DRIZZLE pot with 2 tbsps olive oil in a small glass. While the chicken and potatoes cook, move onto step 2.

  • 2.

Fry the onions for the mash

Heat a little oil in a frying pan and fry the onion for 6-8 mins over medium heat until golden.

Turn the heat down and add the SMOKY MASH MIX. Gently fry for 2 mins, then tip out the onions and spices into a small bowl. Wipe the frying pan to use again in a minute.

  • 3.

    Prepare the charred lettuce

Mash the potatoes with some butter, then mix in your spiced onions. Keep aside.

Heat a little oil in the frying pan over medium heat and cook the lettuce quarters for 2 mins on each of the flat, cut sides. Flip them over to cook their outer sides for 1 min, then turn off the heat. They should be golden on the flat sides and softened, but still have crunch.

  • 4.

Serve the chicken with spiced mash and charred baby gem lettuce. Pour the Mediterranean drizzle over everything, and serve with olives (if having).

Isabelle - Jan 22, 2019

The potato was a bit bland

Tanith - Jan 22, 2019

Loved the charred lettuce, will do that again!

Samantha - Jan 20, 2019

Chicken was tasty. Mash nice too but could have done with a little more flavour. Little gem lettuce was ok too if a bit different!

Ryan - Jan 20, 2019

Very straightforward to cook and rewardingly tasty given the little effort required. The girlfriend wanted to give this a 5. Pak choi functions as a more flavourful alternative to baby gem lettuce.

Manishaa - Jan 19, 2019

Nice flavours, just not keen on grilled lettuce next time would have other green veg instead

Diane - Jan 19, 2019

Lovely alternative to a Sunday roast. Gem lettuce was surprisingly good

Harriet - Jan 17, 2019

The aroma is over powering in a small flat

Mahiyar - Jan 15, 2019

Having tried this dish before and not much liked it with the lettuce, this time we used green beans instead, and that worked a lot better for us. Also roasted some baby tomatoes along with the chicken, for a bit of both colour and balance to the mash. Could have done with a greater quantity of the drizzle which added a nice flavour to both the chicken and the mash.

Chicken was very tasty, could have been more flavour in the mash

Frances - Jan 06, 2019

Really liked this although we did add our own twist. Used roast winter veg instead of the lettuce and incorporated the drizzle into a lovely gravy. A lovely Sunday dinner!

Clare - Jan 06, 2019

Not bad it was something different but not that tasty. Would have again but just to have something different.

Joanna - Jan 01, 2019

Chicken was delicious but dish felt a bit unbalanced with lettuce as the only veg. We added roasted tomatoes which worked well. Also the mash potato was a bit bland, the spice mixture which we added to the onion didn’t infuse through it very well.

Liah - Jan 01, 2019

Not as full of flavour as other dishes but all really compliments and works well together so very tasty

Tara - Jan 01, 2019

I added cheese to the mash and it made the dish perfect! Loved the chicken.. not much flavour from the drizzle but the rest makes up for it

Joanne - Dec 31, 2018

Enjoyed the chicken. Didn’t particularly rate the mash and we didn’t have the lettuce or dressing “drizzle”

Susan - Dec 31, 2018

Really lovely and the charred baby gems were a nice refreshing surprise

Ann - Dec 31, 2018

Very nice! Spicier than the Korma!

One of the best I’ve tried

This tastes so much more delicious than it looks and what I was expecting, definitely cooking this again.

Gill - Dec 20, 2018
