Sicilian Roast Chicken4.2/5 (BASED ON 483 reviews)
Sicilian lemon and Italian herbs combine to create a crisp glaze for the roasted chicken breast, which is paired with a smoky Mediterranean style onion mash. Griddled baby gem lettuce adds freshness to the dish and a spicy paprika drizzle brings it all together to make a light and bright flavoured supper.

How Our Recipes Kits Work
We provide flavour ingredients:
- Lemon & Herb Rub
- Smoky Mash Mix
- Mediterranean Drizzle
Your shopping list:
- chicken breast fillets (or chicken legs)
- large white potatoes
- small red onion
- baby gem lettuce
- butter (from cupboard)
- mixed olives (pitted)(optional)
Our 25 minute recipe
Heat the oven to 200C/fan 180C/gas 6. Rub the chicken with the Lemon & Herb Rub on both sides, then cook on a tray in the oven for 20 mins. Boil the potatoes in a pan of salted water until tender, then drain. Mix the Mediterranean Drizzle pot with 2 tbsps olive oil in a small glass. While the chicken and potatoes cook, move onto step 2.
Heat a little oil in a frying pan and fry the onion for 6-8 mins over medium heat until golden. Turn the heat down and add the Smoky Mash Mix. Gently fry for 2 mins, then tip out the onions and spices into a small bowl. Wipe the frying pan to use again in a minute.
Mash the potatoes with some butter, then mix in your spiced onions. Keep aside. Heat a little oil in the frying pan over medium heat and cook the lettuce quarters for 2 mins on each of the flat, cut sides. Flip them over to cook their outer sides for 1 min, then turn off the heat. They should be golden on the flat sides and softened, but still have crunch.
Serve the chicken with spiced mash and charred baby gem lettuce. Pour the Mediterranean drizzle over everything, and serve with olives (if having).

I think the sauces got mixed up as I didn’t receive a “drizzle”, instead it was another spice mix which was disappointing.

Nanette - Sep 06, 2018
Very dry dish, sauce powdery and not very nice, don’t think the little gem added anything to the dish. Most disappointing dish yet
Luke - Sep 05, 2018
Had an ok taste but not as good as other dishes. Felt like it was something I could make without the box.
Chris - Sep 05, 2018
Great meal and love the charred baby gem - something a bit different. Mash is a bit heavy on the cumin so feels more Indian than Sicilian
Anthony - Sep 05, 2018
A little dry but flavours good as usual!
Elly May - Sep 05, 2018

This is one of my favourite dishes I did add my own twist to it I added chopped mixed peppers to the onion mash & used pak Choi in stead on the lettuce which worked really well

Really tasty lettuce a bit tricky but worth it ,
Stephanie - Sep 04, 2018
Lovely flavours. Great idea of the griddle d salad, but it needs a sauce. The drizzle alone is not enough moisture
