Our 20 minute recipe

  • 1.

Make a few shallow slashes in the thickest parts of the chicken thighs and put them in a bowl with the Panang Paste. Mix well. Bring the grill up to high heat, spread the chicken out flat on a baking tray and grill for 8 mins on each side (or until nicely browned).

  • 2.

If using dried noodles, put them in a heatproof bowl and cover with boiling water. Leave to steep for 6-8 mins, or until the noodles are soft. Then drain the noodles and keep them aside. If you're using fresh noodles, save them for later. Mix the Thai BBQ Hot Sauce in a small bowl with 1 tsp water and put to one side.

  • 3.

Heat a wok or frying pan over medium high heat and when hot, add 1 tbsp of oil and add the bean sprouts and the red pepper (if using) and stir-fry for 2 mins. Add the cucumber, carrot and fry for 1 more min. Add the noodles and the Soy Ginger Dressing and mix well to combine. Add a small splash of water to help the light dressing spread around, if necessary.

  • 4.

Bring the Thai BBQ Hot Sauce to the table to share as a dipping sauce for your chicken. Place 2 chicken thighs on each plate with a portion of noodles. Squeeze some lime juice (if using) over the chicken and noodles and serve!

Gorgeous!

Stephanie - Oct 07, 2018

Delicious, a very firm favourite

Rayzo - Sep 25, 2018

Not bad, baked in the oven rather than grilled. Had with ActiFry chips as couldn’t be bothered with the faff of the veg

Used skinless chick breast instead, great flavours

Kathryn - Sep 20, 2018

This was just ok for me, although my partner really liked it. Nothing much to say about it really, tastes nice if a little bland. Also the chicken takes way longer than suggested in the recipe card. .

Stephen - Sep 20, 2018

OK but a bit bland. Had better from supermarket. However, that’s never been the case with Simply Cook before and I’ve had lots of the meals so doesn’t put me off, just not my thing.

Too salty and spicy for my taste. Not order again. Yuk

Dolley - Aug 20, 2018

The penang paste is great. The rest is bland. I would buy this again and use the hot sauce with steak and use the penang paste and do shredded chicken thighs.

Tiffany - Aug 20, 2018

The noodles need more sauce. It was lost a bit and was a bit bland. Overall it was enjoyable.

Julia - Jul 22, 2018

I really enjoyed making this. The chicken was beautifully tender and flavoured and the BBQ sauce added some nice punch. I also enjoyed the noodles, although I agree that the seasoning got lost. I think one of the reasons for this is that SC are increasing their portion sizes to much too much for the flavour pots to cope with. There was far too much of everything in this recipe - too much chicken, and way too many noodles. These are supposed to be recipes for 2 and more and more often I am seeing too much food leftover. Keep the portion sizes small and the flavour pots will add enough flavour to the ingredients.

Amanda - Jul 19, 2018

Chicken and dip were fabulous. Noodles were pretty tasteless.

Amanda - Jul 19, 2018

Chicken and dip were fabulous. Noodles were pretty tasteless.

Jo - Jul 16, 2018

So tasty..could of done with more of the dressing on the noodles didn’t seem enough but was so tasty and delicious

Luke - Jul 13, 2018

Enjoyed the chicken and bbq sauce but there was little to no flavour in the noodles and veg.

Tiarne - Jul 13, 2018

Delicious and so easy

Rebecca - Jul 13, 2018

I think that the flavouring for the noodles and veg - the ginger and soy - needs to pack so much more of a lunch. It gets lost. But the chicken is delicious!

Jonathan - Jul 11, 2018

Quite nice but found it lacked flavour

Andrew - Jul 08, 2018
