Our 20 minute recipe

  • 1.

Make a few shallow slashes in the thickest parts of the chicken thighs and put them in a bowl with the Panang Paste. Mix well. Bring the grill up to high heat, spread the chicken out flat on a baking tray and grill for 8 mins on each side (or until nicely browned).

  • 2.

If using dried noodles, put them in a heatproof bowl and cover with boiling water. Leave to steep for 6-8 mins, or until the noodles are soft. Then drain the noodles and keep them aside. If you're using fresh noodles, save them for later. Mix the Thai BBQ Hot Sauce in a small bowl with 1 tsp water and put to one side.

  • 3.

Heat a wok or frying pan over medium high heat and when hot, add 1 tbsp of oil and add the bean sprouts and the red pepper (if using) and stir-fry for 2 mins. Add the cucumber, carrot and fry for 1 more min. Add the noodles and the Soy Ginger Dressing and mix well to combine. Add a small splash of water to help the light dressing spread around, if necessary.

  • 4.

Bring the Thai BBQ Hot Sauce to the table to share as a dipping sauce for your chicken. Place 2 chicken thighs on each plate with a portion of noodles. Squeeze some lime juice (if using) over the chicken and noodles and serve!

Wow bursting with flavours. The bbq dipping sauce was scrumptious, only complaint is I wanted more of it lol

Rebecca - Jan 30, 2019

Amazing flavours and so simple

Elliott - Jan 27, 2019

Lots of flavours that complement each other perfectly. The veg and rice noodles have a subtle hint of ginger which works really well with the grilled, slightly chared pansang chicken. It was really easy to make with most of my time being spent prepping veg although even with the veg being specially prepared all in all this meal took no longer that 30 minutes from start to finish. Currently my wife's favourite and will definitly be ordered again!
