Our 20 minute recipe

  • 1.

    Make a few shallow slashes in the thickest parts of the chicken thighs and put them in a bowl with the Panang Paste. Mix well. Bring the grill up to high heat, spread the chicken out flat on a baking tray and grill for 8 mins on each side (or until nicely browned).

  • 2.

    If using dried noodles, put them in a heatproof bowl and cover with boiling water. Leave to steep for 6-8 mins, or until the noodles are soft. Then drain the noodles and keep them aside. If you're using fresh noodles, save them for later. Mix the Thai BBQ Hot Sauce in a small bowl with 1 tsp water and put to one side.

  • 3.

    Heat a wok or frying pan over medium high heat and when hot, add 1 tbsp of oil and add the bean sprouts and the red pepper (if using) and stir-fry for 2 mins. Add the cucumber, carrot and fry for 1 more min. Add the noodles and the Soy Ginger Dressing and mix well to combine. Add a small splash of water to help the light dressing spread around, if necessary.

  • 4.

    Bring the Thai BBQ Hot Sauce to the table to share as a dipping sauce for your chicken. Place 2 chicken thighs on each plate with a portion of noodles. Squeeze some lime juice (if using) over the chicken and noodles and serve!
