Porcini (meaning "piglet" in Italian) mushrooms provide a rich, nutty flavour to dishes and can be used in a variety of ways from seasoning sauces to being pan-fried and served on toast as a snack or starter. Our dish uses dried porcini to season the creamy sauce and we've chosen penne pasta as the ridges in this pasta shape allow it to hold the sauce better.

Simply follow our recipe, adding a few items from your fridge, to cook this delicious Wild Mushroom Penne in just 20 minutes.

- creme fraiche

Our 20 minute recipe
Get the pasta cooking according to pack instructions. (Before draining, see step 3). Meanwhile, heat 1 tbsp of oil in a frying pan over a medium heat and then fry the onion for 3 mins, or until it becomes translucent.
Add the Garlic Paste and the mushrooms to the onions and fry for 3 more mins over high heat. Add the Porcini Stock, the Porcini & Chive pot and the crème fraîche to the pan. Reduce the heat and simmer gently for 2-3 mins. (Add a little more crème fraîche if it’s getting too dry)
When the pasta is ready, use a mug to reserve a little of the cooking water (2 tbsp worth), and then drain the pasta into a colander. Add the pasta and the 2 tbsps of cooking water to the mushroom pan and cook for 2 mins, stirring all the time to fully coat the penne in the sauce.
Serve in bowls with a sprinkle of chopped parsley on top with grated parmesan (if using).

It was nice if you like a very strong mushroom taste. I added chicken and a chicken stock cube to try and dilute the strong mushroom flavour which helped but I wouldn’t order again. I have to say though it was quick and easy and a lovely consistency just not to my taste.

The flavour here was just...well, I could have stirred a tin of Cream of Mushroom soup into some pasta and gotten pretty much the same (poor) result with a tenth of the bother.

My husband loved it I wasnt as thrilled. For me it was a little too overpowering. It wont put me off ordering again with some changes. Next time ill use normal mushrooms i stead of chestnut mushrooms, use much less mushrooms, add chicken and make it looser with more water.

We both loved this one. It makes a change from the usual tomato based pasta sauce. It is very easy to make too. Like another reviewer I thought there was a mistake with the quantity of mushrooms but I used the amount it stated and it worked. We did not find it too salty and we don't use a lot of salt. Would definitely make this again.
