With so many styles of curry in the hawker markets in Bali, Indonesia it was hard to select just one to try, so we’ve taken inspiration from a variety of them. You can use whole drumsticks and thighs in this, as is done authentically. It’s an aromatic curry with coconut, coriander and kaffir lime leaves, the prized signature aromatic ingredient in Indonesian dishes!

We’ve sourced and blended all of the unique flavour ingredients to make our authentic Balinese Chicken. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Balinese Paste pot, a Balinese Garnish  pot and a Garlic Coconut Paste pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Balinese Chicken in just 20 minutes.

Your shopping list for 2 servings:

  • 4 boneless chicken thighs
  • 1 small onion
  • 400ml coconut milk
  • 150g small green beans
  • 40g cashew nuts (optional)
  • 2 parathas/naan breads (or 250g pack microwave basmati rice to make this a gluten free dish) (optional)

Our 20 minute recipe

  1. Get the curry started

    Heat a little oil in a pan over medium heat and fry the chicken and the onion for 3-5 mins.

    Add the GARLIC COCONUT PASTE and stir quickly for 1 min. 

  2. Add the Balinese flavours

    Add the BALINESE PASTE, mix well and then let it cook for 3 mins. 

    Add the green beans to the pan (if using).

  3. Let it simmer

    Mix in the coconut milk and the BALINESE GARNISH, gently boil then reduce the heat and cook for 10 mins.

    Meanwhile, heat the paratha/naan breads (or rice) as per pack instructions, and keep warm.

  4. Serve!

    When the chicken is cooked through, garnish the curry with chopped cashew nuts and serve.

just the right spice level for us very tasty used chicken breast as that's what i had also thicken slightly with cornflour but we prefer a thick sauce.

This was a real favourite. I used about three quarters of the tin of coconut milk and it was plenty. Very tasty dish without being over spicy. We had naan with ours but rice would soak up more of the liquid. Would buy again.

One of the easiest and tastiest, although I would recommend it with rice instead of parathas (a bit too filling and I’m not a fan anyway). Also as I’m veggie, I used a bag of frozen quorn fillets instead of chicken and it worked perfectly! Would definitely have again.
