A brightly coloured dish featuring tender chicken and crunchy bell peppers with wok-tossed noodles in a coconutty peanut sauce. Red chilli, coriander and a squeeze of lime juice bring it all to life and put the “bang” into the dish! We've kept it to a zingy but enjoyable heat level for all. Feel free to add some extra chopped chillies on top for aesthetics and more spiciness, if desired!

Our 20 minute recipe

  1. Fry the chicken

Heat a little oil in a wide frying pan and fry the chicken for 2 mins.

Stir in the BANG BANG PASTE then add the peppers and fry for 2 more mins.

Mix in the coconut milk and bring it to a gentle boil and then reduce the heat to a simmer.

  2. Develop the flavours

Add the GARLIC & COCONUT PASTE and peanut butter and mix well.

Add the spring onions (if using) and cook for 2 mins, or until the chicken is done, then turn off the heat.

  3. Cook the noodles

Boil the noodles as per pack instructions.

Collect a mug full of water from the noodle pan, then drain them and rinse them under cold water.

Stir the CHILLI GARNISH into the chicken pan, then add the noodles and 2 tbsps of your reserved noodle water and toss them to coat them in the sauce. Add a little more cooking water to loosen the sauce into a nice consisitency if it's still a bit too thick (tongs are helpful here.)

  4. Serve the noodles with squeeze of a lime and some sesame seeds sprinkled over (if using).

Again an easy dish to make - I just used rice noodles for my daughter as she is GF. My son wasn’t a fan but he struggles with noodle dishes so no detriment to the taste of the dish. Will just make it for the rest of the family instead

Ordered this as a gift box for my parents and grandma. They all loved it. They are now hooked on simply cook. I personally haven’t tried this, but going by my parents picky taste, I reckon this must be really good. Mum said it was really straight forward to make.

Quite creamy but we used lighter coconut milk and skinny peanut butter to reduce calories. Also added in carrots, onions, chillies and cashews.

Again I found this rather watery so would add some cornflour to thicken it next time

Really lovely, really enjoyed it. Very tasty. A little spicy for the littlest member of the family but his share was demolished by the rest of us!!
