Our 25 minute recipe

  1. Marinate the chicken

    Heat the oven to 200C / fan 180C / gas 6.

Put the chicken on a lined baking tray and rub the BURRITO SPICE BLEND into it on both sides. Drizzle with a little oil then cook in the oven for 20 mins.

  2. Cook the beans

Heat a little oil in a pan over medium heat. Add the onion, cover, and cook for 3 mins to soften.

Stir in the FRIJOLES PASTE then add the black beans with their liquid and let it simmer for 3-4 mins.

Next, use a potato masher to squish about 1/2 the beans, then stir them again. You should end up with a thick, chunky, saucy mixture. Keep it on the lowest heat, stirring occasionally, until you're ready to serve.

(You'll only need half of the beans you've made, but it's better to use a whole tin and have some leftovers!)

  3. Prep the rice and avo

Spoon the avocado flesh out into a bowl and season with some salt and 1/2 a lime's juice.

Heat the rice following the instructions then stir the MEXICAN RICE SAUCE through it with 1/2 a lime's juice.

  4. Serve

Serve the burrito bowls with a layer of rice topped with chopped chicken, your crushed avo and sweetcorn (if having). Give the beans a final stir then serve them on the rice.

We used Tofu instead of chicken and just cooked it in the oven with the spices. Also cheekily made tortilla bowls to serve in. So easy to do mold them over a bowl and oven cook for a few minutes or til lightly browned! Delicious and the tortilla bowl! Also used black eyed peas as didn’t have black beans worked great

Honestly amazing! I don’t like kidney beans so don’t have them but I cook the red onion and mix it in with the rice - it’s tasty! And then I cut a wrap up into 4 and cook til crispy for some tortilla spoons ????
