Our 25 minute recipe

  • 1.

    Marinate the chicken 

    Heat the oven to 200C / fan 180C / gas 6. 

    Put the chicken on a lined baking tray and rub the BURRITO SPICE BLEND into it on both sides. Drizzle with a little oil then cook in the oven for 20 mins.

  • 2.

    Cook the beans 

    Heat a little oil in a pan over medium heat. Add the onion, cover, and cook for 3 mins to soften. 

    Stir in the FRIJOLES PASTE then add the black beans with their liquid and let it simmer for 3-4 mins. 

    Next, use a potato masher to squish about 1/2 the beans, then stir them again. You should end up with a thick, chunky, saucy mixture. Keep it on the lowest heat, stirring occasionally, until you're ready to serve. 

    (You'll only need half of the beans you've made, but it's better to use a whole tin and have some leftovers!)

  • 3.

    Prep the rice and avo 

    Spoon the avocado flesh out into a bowl and season with some salt and 1/2 a lime's juice. 

    Heat the rice following the instructions then stir the MEXICAN RICE SAUCE through it with 1/2 a lime's juice.

  • 4.

    Serve

    Serve the burrito bowls with a layer of rice topped with chopped chicken, your crushed avo and sweetcorn (if having). Give the beans a final stir then serve them on the rice.
