Get ready for our colourful burrito bowl, packed full of nutritious Mexican spicy black beans (or frijoles!), chargrilled peppers, smashed avocado and sweetcorn, all on a bed of coriander and garlic- flecked rice. Exciting, easily customisable and straightforward to prepare.

We’ve sourced and blended all of the unique flavour ingredients to make our authentic Burrito Bowl. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Burrito Spice Blend pot, a Frijoles Paste pot and a Mexican Rice Sauce pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Burrito Bowl in just 20 minutes.

Your shopping list for 2 servings:

  • 2 peppers, thinly sliced
  • 1 small red onion, finely chopped
  • 400g tin black beans in water (don't drain)
  • 250g pack of microwave basmati rice
  • 1 avocado
  • 1 lime
  • Olive oil
  • 200g sweetcorn, drained and rinsed
  • crumbled salad cheese

Our 20 minute recipe

  1. Marinate the peppers 

    Heat the oven to 200C / fan 180C / gas 6. 

    Mix the peppers with the BURRITO SPICE BLEND and a little oil on a lined baking tray and cook in the oven for 20 mins.

  2. Cook the beans 

    Heat a little oil in a pan over medium heat. Add the onion, cover, and cook for 3 mins to soften. 

    Stir in the FRIJOLES PASTE then add the black beans with their liquid and let it simmer for 3-4 mins. 

    Next, use a potato masher to squish about 1/2 the beans, then stir them again. You should end up with a thick, chunky, saucy mixture. Keep it on the lowest heat, stirring occasionally, until you're ready to serve.

  3. Prep the rice and avo 

    Spoon the avocado flesh out into a bowl and season with some salt and 1/2 a lime's juice. 

    Heat the rice following the instructions then stir the MEXICAN RICE SAUCE through it with 1/2 a lime's juice.

  4. Serve

    Serve the burrito bowls with a layer of rice topped with peppers, your crushed avo and sweetcorn if having). Give the beans a final stir then serve them on the rice with some crumbled cheese sprinkled on top (if having).
