Simply follow our recipe, adding a few items from your fridge, to cook this delicious Burrito Bowl in just 20 minutes.

- peppers, thinly sliced
- small red onion, finely chopped
- tin black beans in water (don't drain)
- pack of microwave basmati rice
- Olive oil
- sweetcorn, drained and rinsed
- crumbled salad cheese
Our 20 minute recipe
Marinate the peppers
Heat the oven to 200C / fan 180C / gas 6.
Mix the peppers with the BURRITO SPICE BLEND and a little oil on a lined baking tray and cook in the oven for 20 mins.
Cook the beans
Heat a little oil in a pan over medium heat. Add the onion, cover, and cook for 3 mins to soften.
Stir in the FRIJOLES PASTE then add the black beans with their liquid and let it simmer for 3-4 mins.
Next, use a potato masher to squish about 1/2 the beans, then stir them again. You should end up with a thick, chunky, saucy mixture. Keep it on the lowest heat, stirring occasionally, until you're ready to serve.
Prep the rice and avo
Spoon the avocado flesh out into a bowl and season with some salt and 1/2 a lime's juice.
Heat the rice following the instructions then stir the MEXICAN RICE SAUCE through it with 1/2 a lime's juice.
Serve the burrito bowls with a layer of rice topped with peppers, your crushed avo and sweetcorn if having). Give the beans a final stir then serve them on the rice with some crumbled cheese sprinkled on top (if having).
