Ca Kho To is a Vietnamese dish of caramelised fish, traditionally braised in a clay pot with a sweet and savoury sauce. In Vietnam it’s a popular, comfort-food dish, which is enjoyed regularly by locals. Our Ca Kho To has a lovely sweetness and gooey-ness to it with flavours of ginger and a little kick of chilli to balance it out. This is delicious with a dash of fresh lime juice squeezed all over to serve.

Our 30 minute recipe

  1. Prep the cod

Cook the rice according to pack instructions, and keep warm.

Mix the shallots in a bowl with the sugar, the CA KHO TO FISH PASTE and the GINGER & GARLIC MIX.

Add the cod pieces to the bowl, and mix carefully to coat.

  2. Cook the fish

Heat 1 tbsp of oil in a wide, non-stick pan over a medium-heat and then add the fish, keeping back the marinade mixture. Briefly sear for 1 min on each side then remove from the pan.

Add the rest of the marinade mixture, the coconut water and the GALANGAL GARNISH to the pan. Bring it to the boil, then reduce the heat to medium and let it cook uncovered for 10 mins so the sauce reduces a little and becomes sticky. Stir occasionally and add 50ml of coconut water if it looks too dry halfway through.

  3. Finishing touches

If you’re doing steamed greens on the side, prepare this now.

Return the fish to the pan, then simmer on a low heat for 5 more mins, or until the fish is cooked.

  4. Serve!

Squeeze a lime over the fish and serve it over rice with steamed greens on the side (optional).

Enjoyed this one but found it difficult to stop the fish breaking up. Tasty but mine didn’t look much like the picture!

Alice - 20th September 2020

Very easy to cook, but a bit too sweet for my liking

Sarah - 14th September 2020

This is really tasty would definitely order again, but cook less rice as this didn’t balance to the amount of sauce.

Sarah Jane - 11th September 2020

I used raw prawns. Delicious

Very tasty, would definitely buy again. Might try it with vermicelli noodles next time. It's similar to a dish called 'Cha Ca' which is served with vermicelli in Hanoi.

Emma - 2nd September 2020

Bit faffy to make but Def worth it very tasty and would make again, works perfectly with cod

Olivia - 2nd September 2020

Really tasty but the sauce didn’t seem to reduce or get sticky - that might have been my fault but I did follow the instructions!

Lisa - 2nd September 2020

Really great recipe. Very quick and easy for a light meal.

Used chicken instead of cod because I couldn’t find any in the freezer, red onion instead of shallots, red wine instead of coconut milk/water and honey instead of sugar. I added red lentils too. It tasted so good that everyone ate it; even my mum who hates spicy food! I would like to make it the way it instructs at some point but my swaps went down a treat so no complaints here. I like dishes that have the freedom to swap out ingredients, especially as I’ve recently discovered some intolerance to certain food, this is one of them versatile dishes but I would like more paste please.
