Ca Kho To is a Vietnamese dish of caramelised fish, traditionally braised in a clay pot with a sweet and savoury sauce. In Vietnam it’s a popular, comfort-food dish, which is enjoyed regularly by locals. Our Ca Kho To has a lovely sweetness and gooey-ness to it with flavours of ginger and a little kick of chilli to balance it out. This is delicious with a dash of fresh lime juice squeezed all over to serve.

We’ve sourced and blended all of the unique flavour ingredients to make our authentic Ca Kho To. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Ca Kho To Fish Paste pot, a Ginger & Garlic Mix pot and a Galangal Garnish pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Ca Kho To in just 30 minutes.

Your shopping list:

large shallots
jasmine rice
cod fillet/loin
coconut water
brown sugar (less for white)
green veg of your choice(optional)

Our 30 minute recipe

  • 1.

    Prep the cod

    Cook the rice according to pack instructions, and keep warm. 

    Mix the shallots in a bowl with the sugar, the CA KHO TO FISH PASTE and the GINGER & GARLIC MIX.

    Add the cod pieces to the bowl, and mix carefully to coat.

  • 2.

    Cook the fish

    Heat 1 tbsp of oil in a wide, non-stick pan over a medium-heat and then add the fish, keeping back the marinade mixture. Briefly sear for 1 min on each side then remove from the pan.

    Add the rest of the marinade mixture, the coconut water and the GALANGAL GARNISH to the pan. Bring it to the boil, then reduce the heat to medium and let it cook uncovered for 10 mins so the sauce reduces a little and becomes sticky. Stir occasionally and add 50ml of coconut water if it looks too dry halfway through.

  • 3.

    Finishing touches

    If you’re doing steamed greens on the side, prepare this now. 

    Return the fish to the pan, then simmer on a low heat for 5 more mins, or until the fish is cooked. 

  • 4.


    Squeeze a lime over the fish and serve it over rice with steamed greens on the side (optional).

I've loved most Simply Cook recipes but this one was terrible. It's incredible sweet and doesn't have much flavour other than sweetness. I found it really unpleasant. Also if your fish isn't very firm it will just flake to bits.

This was unexpectedly amazing, the smell of fish sauce is never great and I felt this dish may not have a great taste, but it was so tasty. The heat and kick of chilli was perfect, really light dinner with a real punch of flavour. Instead of greens I cooked sprouting broccoli..lovely
