Cajun Chicken with Red Pepper Sweet Potato Mash4.3/5 (BASED ON 2038 reviews)
We tested over 20 different Cajun rubs in the SimplyCook kitchen until deciding on this one! Destined to impress, the Cajun Seasoning in this kit really lives and breathes the classic flavours of Louisiana with bold notes of cayenne, paprika and coriander. The delicious Red Pepper Paste swirled through the sweet potato mash is genius! - another thanks to a Chef friend (who wishes to remain anonymous) from the deep south of the United States. That's Southern hospitality at its finest. Get your fix of spicy Cajun, comforting sweet potato, and your vitamin rich Okra from this delight of a dish, but if you can't find Okra in your supermarket, then courgette will do just fine too!

Simply follow our recipe, adding a few items from your fridge, to cook this delicious Cajun Chicken with Red Pepper Sweet Potato Mash in just 25 minutes.
How Our Recipes Kits Work
We provide flavour ingredients:
- Cajun Seasoning
- Garlic Oil
- Red Pepper Stock
Your shopping list:
- chicken breasts (skin on or off)
- sweet potato
- 3 rashers
- streaky smoked bacon
- okra or 1 courgette
- feta cheese(optional)
Our 25 minute recipe
Heat the oven to 200C/fan 180C/gas 6. Drizzle half of the Garlic Oil over the chicken fillets and then sprinkle over the Cajun Seasoning. Make sure they're coated on both sides then put them on a baking tray in the oven and cook for 20-25 mins, or until cooked through.
Boil the sweet potato in a pot of boiling water for 15 mins, or until cooked through. While the chicken and the potatoes cook, continue with step 3.
Heat the remaining Garlic Oil in a frying pan over a medium heat and fry the bacon rashers for 3 mins, or until they crisp up. Add the okra and fry for 2 more mins. (Courgette will need an additional 2 mins.)
Drain the sweet potato, mash and stir in the Red Pepper Stock. Add the bacon and okra and mix together.
Divide the mash between 2 plates and crumble the feta cheese on top, (if using). Place a Cajun chicken breast on each plate and enjoy.

I love the sweet potato concoction, just be careful and actually weight the quantity of sweet potatoes otherwise the seasoning for the mash gets lost if it's too much.

This was delicious although a tad too orange in its appearance, could do with a bit of colour balance for presentation. Fantastic tastes though.
