We’ve sourced and blended all of the unique flavour ingredients to make our authentic Cajun Chicken with Red Pepper Sweet Potato Mash. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Cajun Seasoning pot, a Garlic Oil pot and a Red Pepper Stock pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Cajun Chicken with Red Pepper Sweet Potato Mash in just 25 minutes.

Your shopping list:
- sweet potatoes
- chicken breasts (skin on or off)
- 5 rashers
- of streaky bacon
- okra (or 1 large courgette)
- feta cheese(optional)
Our 25 minute recipe
Prep the chicken and mash
Brush the chicken on both sides with half of the GARLIC OIL then coat in the CAJUN SEASONING. Keep aside.
Boil the sweet potatoes for 15 mins, or until tender.
Fry the chicken
Heat a frying pan then cook the chicken for 5-6 mins on each side until cooked through. Remove from pan.
Prepare the garnishes
Heat the remaining GARLIC OIL in a frying pan over a medium heat and fry the bacon pieces for 3 mins, or until crisp.
Add the okra and fry for 2 more mins. (Courgette will need an additional 2 mins.)
Flavour the mash
Drain the sweet potato, mash it and then stir in the RED PEPPER STOCK.
Mix the bacon and okra into the mash.
Serve the chicken with mash and crumble some feta cheese on top (optional).

I was really looking forward to trying this but was left completely underwhelmed by the chicken; it had a reasonable amount of heat and cooked well with a firm bite to it, however there was absolutely no depth of flavour. The sweet potato mash with okra, bacon and feta cheese was lovely though; a wonderful blend of flavour and texture. I'm not usually a huge fan of sweet potato, but with the other ingredients it wowed the palate.
