Our authentic flavours are the deeply smoky, slightly spicy and earthy flavours of a chipotle blend that completely transform simple chicken into zesty chicken tinga tostadas. We ve put a twist on a classic salsa by doing roasted cherry tomatoes mixed with a special salsa sauce to get a lovely sweet but warm heat running through your tinga. This with a smoky BBQ sauce spiked sour cream makes for really different style of wrap. We’ve added plenty of options for you in the ingredients section but it’s just as epic with the short list of 5. Your shopping list for 2 servings:

  • 4 boneless chicken thighs
  • 4 tortillas (preferably corn)
  • 70ml soured cream
  • Guacamole (optional)
  • 250g cherry tomatoes
  • Cheddar cheese (optional)
  • 2 spring onions (optional)
  • 1 lime

Our 20 minute recipe

  1. Cook the chicken

    Heat the oven to 200C/180C fan/gas 6.

    Mix the chicken with the CHIPOTLE RUB and the lime zest and juice. Bake on a tray in the oven for 20 mins.

  2. Roast the tomatoes

    Drizzle the tomatoes with oil on another tray and cook in the oven for 10 mins. Meanwhile, do step 3.

  3. Prep the condiments

    Mix the SMOKY BBQ PASTE into the soured cream. Keep aside.

    Put the roasted tomatoes in a bowl and carefully squash them with a fork (watch out for the hot juices).  Mix the SALSA PASTE through, then keep aside. 

    Remove the chicken from the oven then turn it off. Put your tortillas into the oven for 1 min to warm up in the residual heat.

    Slice the chicken into thin strips.  

  4. Serve!

    To make your Tinga, spread guacamole (if using) on each tortilla, followed by the chicken, salsa and BBQ cream, along with grated cheese and spring onions (if using) and a squeeze of lime. Wrap it up and eat.
