- Basmati rice
- beef mince
- large onion finely chopped
- tin chopped tomatoes
- tin red kidney beans drained and rinsed
- soured cream or grated cheese to serve(optional)
- coriander finely chopped(optional)
- lime (optional)
Our 30 minute recipe
Make the rice
Cook the rice according to pack instructions, and keep warm.
Fry the beef
Heat a little oil in a wide saucepan over medium-heat and fry the onion for 3 mins to soften.
Turn up the heat and add the beef mince, letting it sizzle for a minute before stirring it and breaking it up with a wooden spoon. Fry for 5 mins to brown it all over.
Turn the heat down, add the CHIPOTLE SPICE MIX and stir well.
Develop the flavours
Stir in the CHILLI CON CARNE STOCK and fry for 1 min, then pour in the tinned tomatoes with 200ml water.
Turn the heat up to medium and let it bubble away for 10 mins, stirring occasionally.
Stir in the kidney beans and the COCOA CHILLI PASTE, then cook for 8 more mins over a medium-low heat.
Serve the Chilli over rice and garnish with optional coriander, soured cream or cheese and lime juice.
