A smoky date dipping sauce completes this heart-warming take on "Sausage & Mash".

Your shopping list for 2 servings:

  • 450g potatoes
  • 6 pork sausages
  • 1 head cabbage (around 150g)
  • 3 spring onions
  • 20g butter
  • 50ml milk

Our 20 minute recipe

  1. 1. Get prepped

    Heat the oven to 200C / fan 180C / gas 6. Boil the potatoes in a pan of salted water until tender (12-15 mins). 

    Cook the sausages on a lined baking tray in the oven for 20 mins.

  2. 2. Meanwhile, fry the cabbage

    Heat a little oil in a wide pan and then fry the cabbage (with a pinch of salt) for 5 mins over medium-high heat, stirring occasionally to allow it to get some golden colour.

    When the potatoes are tender, drain them and mash with butter and a splash of milk, then mix the PAPRIKA COLCANNON MIX into it. (Add more butter if it’s looking dry).

    Mix the sautéed cabbage and the spring onions through the mash, then keep warm.

  3. 3. Glaze the sausages

    Take the sausages out of the oven and carefully pour off the excess fat from the tray.

    Drizzle the BACON CHILLI GLAZE over them and turn them in it to fully coat. Return to the oven for 2 mins.

  4. 4. Finishing touches

    Mix the SMOKY DATE SAUCE with 2 tsp water to loosen it.

  5. Serve!

    Serve the glazed sausages with some colcannon mash and your date dipping sauce on the side.
