Our 20 minute recipe

  • 1.

    Marinate the duck

    Pre-heat the oven to 220C/fan 200C/gas 7.

Mix the CHINESE MARINADE and the SZECHUAN FIVE SPICE in a bowl.

Pat each duck breast dry with a paper towel and make 5-6 diagonal slashes in the skin, going just through to the flesh. Season them and place them flesh side down in the bowl of marinade and rub the mixture into the flesh side.

  • 2.

    Pan-fry the duck

Place the duck breasts skin side down in a cold, oven-proof frying pan, without oil. Then turn the heat on low and let them cook for 8 mins, or until the fat has melted out and the skin is golden brown.  Pour off the fat regularly into a heat-proof container.

Next, turn the duck breasts over to cook the flesh side for 1-2 mins.

  • 3.

    Finish it in the oven

Put the pan into the oven (or put the duck breasts onto a baking tray) for 6-8 mins for medium-rare or 10-12 mins for medium-well, keeping them skin side up this time.

  • 4.

    Prep the salad

Meanwhile, mix the lettuce, cucumber, spring onions and avocado (if using) together and then serve onto plates and top with the pomegranate seeds.

When the duck is cooked to your liking, remove from the oven and leave to rest on a board for a few mins. Then slice the duck and arrange it on the salads and drizzle with HOI SIN SAUCE.

Did it with rice instead of salad!

Stephen - Nov 23, 2018

It's just duck on a bed of lettuce really.

Tom - Nov 21, 2018

Surprisingly delicious

Daniel - Nov 17, 2018

Seeing how outrageously expensive duck is, skin-on Chicken breasts are a good substitute!

Sally - Nov 09, 2018

Did not like the marinade which burnt in the pan when it went in the oven

Paul - Nov 02, 2018

I used wild mallard which had very little fat and a stronger flavour but was still a goid dish. Will try again with supermarket barbarie duck

Lauren - Oct 31, 2018

Husband loved it! Wasn’t my favourite but still very good!

Trudy - Oct 29, 2018

Kids loved it

Vanessa - Oct 23, 2018

The BBC good food oriental duck salad is similar but much better

Sarah - Oct 18, 2018

Enjoyable but a little bland and dry

Geraldine - Oct 17, 2018

Really disappointing. Nothing special that couldn’t have been achieved with a dash of five spice and some soy sauce at home

Paul - Oct 09, 2018

Was really tasty. Quite tricky to cook the duck medium and still get the marinade Cooked in without burning. I used wild mallard though so was no fat render.

Maggie - Oct 06, 2018

I did it as less of a salad and had it with noodles instead mixed in with the juices from the oven dish with the cucumber & pomegranate. Very nice.

Joanne - Sep 28, 2018

Nice flavour but a bit dry

Lovely dish. Certainly needs the avocado and pomegranate seeds

Frances - Sep 07, 2018

Delicious! Added sliced radish to the salad for a bit of colour. The pomegranate seeds added a lovely sweet accent.

Lesley-Ann - Sep 03, 2018

Nice dish but needs a more substantial side dish with it

Kim - Aug 30, 2018

Exceptional

Pauline - Aug 25, 2018

Not my favourite but my husband love it

Kim - Aug 23, 2018

Very tasty.

Hayley - Aug 23, 2018

The duck was very nice, lovely flavour and cooked to perfection! We didn't find it very filling though, better as a light lunch. I won't be ordering this one again as I could probably recreate this myself with what I have on my spice rack and next time I will probably use chicken as duck is so expensive!

olga - Aug 19, 2018

it is very simply to cook and tasty like standart salad.

David - Aug 18, 2018

Was improved by dressing the leaves etc with sushi vinegar and a littleOil. Also poured the meat juices over the salad

Carol - Aug 18, 2018

Ok but wouldn’t want it again.

Alyson - Aug 16, 2018

A really nice dish.....added some chinese egg noodles for substance but a great choice for the low carb member of the family

Hayley - Aug 06, 2018

So easy but really taste full the flavours were amazing x

Helena - Aug 04, 2018

Used fillet of pork. It was excellent. After reading other reviews I cooked new potatoes to go with it

Helen - Aug 01, 2018

This dish was absolutely wonderful and tasty. I have never cooked duck before but will definitely do it again.

Claire - Jul 31, 2018

Blooming delicious! And me an avocado avoider usually!

Sally - Jul 30, 2018

Goody

Kathryn - Jul 27, 2018

Loved the switch up of having duck rather than the usual chicken. The flavouring on the duck was delicious. However, this really isn’t a main meal portion, I added story fry veg to mine & also some noodles to bulk out.

Tanisha - Jul 23, 2018

Soft and aroma duck and smell so nice

Emily - Jul 07, 2018

Nice duck but not really a good meal for us, still hungry after.

Caz - Jun 26, 2018

It took lots of bowls and pans so lots of washing up afterwards. It didn’t fill husband up and whilst I kept to the minutes advised for medium rare, the duck was overdone. It was OK but definitely not my favourite. The salad was a bit disapointing too. Sorry !

Helen - Jun 22, 2018

Very tasty & very filling. Loved the salad eith pomegranates.

Sally - Jun 21, 2018

Delicious
