Our 20 minute recipe

  • 1.

    Pre-heat the oven to 220C/fan 200C/gas 7. Mix the Chinese Marinade and the Szechuan Five Spice in a bowl. Pat the skin of each duck breast dry and use a knife to make 3-4 diagonal slashes in the skin, going just through to the flesh. Season the duck breasts with salt and pepper and place them flesh side down (skin side still up) in the bowl of marinade and rub the mixture into the flesh.

  • 2.

    Now place the breasts skin side down in a cold, oven-proof frying pan, without oil, and then turn the heat on low and let them cook for 8-10 mins, or until the skin is golden brown. Pour off the fat regularly into a heat-proof container. Then turn the duck breasts over to seal the flesh side for 1-2 mins.

  • 3.

    Put the pan into the oven for 10-12 mins for medium-rare or 15 mins for medium-well. Keep them skin side up.

  • 4.

    Meanwhile, put the lettuce, cucumber, spring onions, avocado (if using) on 2 plates and top with the pomegranate seeds.

  • 5.

    When the duck is cooked to your liking, (don’t forget oven mittens) remove the pan from the oven and let it rest for a few mins. Slice the duck breasts on the diagonal and arrange on top of your salad. Drizzle with the Hoi Sin Sauce and tuck in!

It took lots of bowls and pans so lots of washing up afterwards. It didn’t fill husband up and whilst I kept to the minutes advised for medium rare, the duck was overdone. It was OK but definitely not my favourite. The salad was a bit disapointing too. Sorry !
