Our 20 minute recipe

  • 1.

    Marinate the duck

    Pre-heat the oven to 220C/fan 200C/gas 7.

    Mix the CHINESE MARINADE and the SZECHUAN FIVE SPICE in a bowl.

    Pat each duck breast dry with a paper towel and make 5-6 diagonal slashes in the skin, going just through to the flesh. Season them and place them flesh side down in the bowl of marinade and rub the mixture into the flesh side.

  • 2.

    Pan-fry the duck

    Place the duck breasts skin side down in a cold, oven-proof frying pan, without oil. Then turn the heat on low and let them cook for 8 mins, or until the fat has melted out and the skin is golden brown.  Pour off the fat regularly into a heat-proof container.

    Next, turn the duck breasts over to cook the flesh side for 1-2 mins.

  • 3.

    Finish it in the oven 

    Put the pan into the oven (or put the duck breasts onto a baking tray) for 6-8 mins for medium-rare or 10-12 mins for medium-well, keeping them skin side up this time.

  • 4.

    Prep the salad

    Meanwhile, mix the lettuce, cucumber, spring onions and avocado (if using) together and then serve onto plates and top with the pomegranate seeds.

    When the duck is cooked to your liking, remove from the oven and leave to rest on a board for a few mins. Then slice the duck and arrange it on the salads and drizzle with HOI SIN SAUCE.
