- pomegranate seeds
Our 20 minute recipe
Marinate the duck
Pre-heat the oven to 220C/fan 200C/gas 7.
Mix the CHINESE MARINADE and the SZECHUAN FIVE SPICE in a bowl.
Pat each duck breast dry with a paper towel and make 5-6 diagonal slashes in the skin, going just through to the flesh. Season them and place them flesh side down in the bowl of marinade and rub the mixture into the flesh side.
Pan-fry the duck
Place the duck breasts skin side down in a cold, oven-proof frying pan, without oil. Then turn the heat on low and let them cook for 8 mins, or until the fat has melted out and the skin is golden brown. Pour off the fat regularly into a heat-proof container.
Next, turn the duck breasts over to cook the flesh side for 1-2 mins.
Finish it in the oven
Put the pan into the oven (or put the duck breasts onto a baking tray) for 6-8 mins for medium-rare or 10-12 mins for medium-well, keeping them skin side up this time.
Prep the salad
Meanwhile, mix the lettuce, cucumber, spring onions and avocado (if using) together and then serve onto plates and top with the pomegranate seeds.
When the duck is cooked to your liking, remove from the oven and leave to rest on a board for a few mins. Then slice the duck and arrange it on the salads and drizzle with HOI SIN SAUCE.

The duck was delicious, but I found the salad a little plain. I served with rice and about half the amount of salad suggested as I found the proportions of the meal a bit unbalanced.

Seeing how outrageously expensive duck is, skin-on Chicken breasts are a good substitute!
Sally - Nov 09, 2018
Did not like the marinade which burnt in the pan when it went in the oven
Paul - Nov 02, 2018
I used wild mallard which had very little fat and a stronger flavour but was still a goid dish. Will try again with supermarket barbarie duck
Lauren - Oct 31, 2018

Trudy - Oct 29, 2018

Sarah - Oct 18, 2018
Enjoyable but a little bland and dry
Geraldine - Oct 17, 2018
Really disappointing. Nothing special that couldn’t have been achieved with a dash of five spice and some soy sauce at home
Paul - Oct 09, 2018
Was really tasty. Quite tricky to cook the duck medium and still get the marinade Cooked in without burning. I used wild mallard though so was no fat render.
Maggie - Oct 06, 2018
I did it as less of a salad and had it with noodles instead mixed in with the juices from the oven dish with the cucumber & pomegranate. Very nice.
