Simply follow our recipe, adding a few items from your fridge, to cook this delicious Chipotle Grilled Cauli Salad in just 20 minutes.

  • 1 small cauliflower
  • 1 avocados
  • 2 red peppers
  • 1bag of salad
  • 100ml soured cream
  • 100g feta cheese (optional)

Our 20 minute recipe

  1. Prepare the roasting veg

    Heat the oven to 200C (fan 180C / gas 6).

    Meanwhile, mix the ANCHO STEAK RUB with a little oil to make a paste then toss this with the cauliflower florets on a baking tray to fully coat. Cook in the oven for 20-25 mins.

    Toss the red peppers with 1 tbsp oil and the LEMON & HERB BLEND on a separate baking tray and also put these in the oven for 20 mins.

  2. Make your dressing

    Mix the CHIPOTLE PASTE into the soured cream with 1 tbsp water, then keep aside.

  3. Prep the salad

    Make your salad with avocado, salad leaves and feta cheese (optional). Wait until the veg is ready, then lightly dress the salad with olive oil.

  4. Serve

    Toss the cauliflower and peppers through the salad leaves, then drizzle over your chipotle dressing.

Served with crispy sourdough bread - very tasty ???? Added cucumber tomato and avocado with salad It’s essential to make the florets of cauliflower fairly small to ensure they are cooked properly- and turn a few times to make sure they are nicely roasted
