Your shopping list for 2 servings:

  • 1 large sirloin/rump steak (250g)
  • 1 avocados
  • 2 red peppers widely
  • 1bag of salad
  • 100ml soured cream
  • 100g feta cheese (optional)

Our 20 minute recipe

  1. Heat the oven to 200C/fan 180/gas 6.

    Mix the red peppers with 1 tbsp oil and the LEMON AND HERB BLEND and cook in the oven for 20 mins.

    Meanwhile, marinate the steak in a little oil and the ANCHO STEAK RUB on both sides.

  2. Pan-fry the steak

    Heat a pan over high heat, and when hot, brush the excess spice rub off the steak and put it in the pan. Reduce the heat to medium-high and leave it to cook for 2-3 mins.

    Flip the steak and cook for 2-3 more mins for medium-rare, or longer for more well done. Then remove it from the pan and rest it in foil for a few mins. 

  3. Prep the salad and dressing

    Mix the CHIPOTLE PASTE into the soured cream with 1 tbsp water.

    Create your salad with avocado, salad leaves and feta cheese (optional). Lightly dress it with olive oil. 

  4. Serve!

    Slice the steak and arrange it on the salad with the peppers. Drizzle over the chipotle dressing.
