A boldly flavoured ancho chilli steak blend with cracked black pepper, fennel seeds and citrus peel is rubbed onto sirloin steak which is pan-fried and then served on a bed of crunchy salad. Cooling avocado, lemon and herb roasted red peppers and creamy chunks of feta cheese add texture to this colourful bowl of food. A spicy chipotle and soured cream dressing ties it all in together with a squeeze of lime.

  • 2 large sirloin/rump steak
  • 2 avocado
  • 3 peppers (any colour)
  • 2bag mixed salad
  • 200ml soured cream
  • 200g feta cheese (optional)

Our 20 minute recipe

  1. Heat the oven to 200C/fan 180/gas 6

    Mix the peppers with a little oil and the LEMON AND HERB BLEND and bake in the oven for 20 mins. 

    Meanwhile, marinate the steaks in a little oil and the ANCHO STEAK RUB on both sides. 

  2. Pan-fry the steak

    Heat a pan over high heat, and when hot, brush the excess spice rub off the steaks and put them in the pan. Reduce the heat to medium-high and leave to char for 2-3 mins. 

    Flip the steaks and fry for 2-3 more mins for medium-rare, or longer for more well done. Remove from the pan and rest in foil for a few mins.

  3. Prep the salad and dressing

    Mix the CHIPOTLE PASTE into the soured cream with 1 tbsp water. 

    Create your salad with avocado, salad leaves and feta cheese (optional). Lightly dress it with olive oil. 

  4. Serve!

    Slice the steaks and arrange them on the salad with the peppers. Drizzle over the chipotle dressing.
