Your shopping list for 2 servings:

  • 1 small broccoli, cut into half florets
  • 2 salmon fillets
  • 120g Basmati rice
  • 1g tin black beans, drained and rinsed
  • 1 lime
  • Olive oil
  • soured cream (optional)

Our 25 minute recipe

  1. Roast the broccoli 

    Heat the oven to 200C / fan 180C / gas 6. 

    Toss the broccoli with some oil and the ROASTED VEG BLEND on a baking tray and cook in the oven for 10 mins. 

    Spread the CHIPOTLE HONEY GLAZE onto the salmon fillets and put on a lined baking tray. Keep aside. 

  2. Cook the salmon 

    Cook the rice as per pack instructions. 

    When the broccoli has had 10 mins, put the salmon tray into the oven on the shelf above and continue to cook both for 8-10 more mins.

  3. Finishing touches 

    When the rice is done, add the MEXICAN RICE SAUCE, the beans and a squeeze of lime to it, then mix well.

  4. Serve!

    When the salmon and broccoli are cooked, serve them with rice and some soured cream (if having).
