This is a simple but sophisticated pasta that's filled with fresh and bright flavours. Grated courgette is flash fried with chilli and garlic, then enriched with white wine and then seasoned with our blend of crispy onion and sun-dried tomato with leek and Sicilian lemon oil. Ricotta adds a creaminess to the dish and a little bit of pan-fried courgette provides a crunchy, savoury garnish to top off this light linguine dish.

Our 20 minute recipe

  1. Get the pasta on 

    Cook the pasta according to pack instructions, reserving a cup of water before you drain it. 

    Heat a little oil in a wide pan over medium-high heat, then add a handful of courgette and let it cook until golden brown. Remove this and put it on some kitchen paper - this will be your crispy courgette garnish. 

  2. Make the sauce 

    In the same pan, add a little more oil and the CITRUS & CHILLI PASTE and fry for 10 secs then add the rest of the courgette and cook for 1 minute. 

    Add the WHITE WINE PASTE and a splash of the pasta cooking water and cook for 2 mins. Add the POMODORO SEASONING and cook for 1 min then turn off the heat. 

  3. Finishing touches 

    Once it's cooled slightly, mix 1 heaped tbsp of ricotta into the pan. 

    Use tongs to put the drained pasta into your courgette sauce and toss to fully mix it, adding a little more pasta cooking water if you need to loosen the sauce. 


  4. Serve

    Serve the pasta in bowls with your reserved golden brown courgette garnish on top with a squeeze of lemon (if using) and some extra little dots of ricotta here and there.
