Normally an absolute scorcher with scotch bonnet chillies, we've toned down the heat in ours but kept the flavour big with over 21 ingredients alone in our Jerk Seasoning including allspice, thyme, ginger nutmeg and cinnamon. Incomplete without rice and peas, we show you how to create the authentic side to this Caribbean carnival of a dish in the comfort of your own home. No need to marinate for hours on end, we've packed all the flavour into our three little pots.

Our 20 minute recipe

  • 1.

    Marinate the chicken

    Heat the oven to 200C/180C fan/gas 6 and boil 150ml water in the kettle. 

    Mix the JERK SEASONING and the JERK PASTE together in a mixing bowl with a drop of oil, then add the chicken thighs and mix well to fully coat. 

  • 2.

    Roast the chicken

    Place the chicken on a baking tray with the lime wedges (if using) and cook in the oven for 20 mins. 

  • 3.

    Meanwhile, make the rice

    Heat a little oil in a non-stick pan over medium-high heat and then fry the onion for 2 mins to soften. 

    Add the rice, coconut milk, 150ml boiling water and the CHICKEN STOCK to the pan and mix well.  Bring it to the boil, then cover with a lid, turn the heat down to low and let it simmer for 10 mins. 

  • 4.

    Add the beans

    Stir the kidney beans into the rice then cover it again with a lid and leave it off the heat for 5 mins until all the liquid has been absorbed.

  • 5.

    Serve!

    To serve, squeeze the roasted limes over the chicken and serve with your “rice and peas” and some seasoned sweetcorn on the side (if using).

Used salmon instead of chicken. Delicious. However I dont think I like coconut milk and the rice was slimy. And baking the limes made them bitter, which ruined the salmon. Might get again but do my own thing with the rice and use raw limes.

We enjoyed this. Used chicken thighs with skin on and bone so tastier and used arborio rice. The rice was maybe a little on the tasteless side so added salt with chilli and garlic and was lovely. Wondering if people are using cooked rice rather than straight from bag to get the mush ??? Would choose again :)
