Normally an absolute scorcher with scotch bonnet chillies, we've toned down the heat in ours but kept the flavour big with over 21 ingredients alone in our Jerk Seasoning including allspice, thyme, ginger nutmeg and cinnamon. Incomplete without rice and peas, we show you how to create the authentic side to this Caribbean carnival of a dish in the comfort of your own home. We’ve sourced and blended all of the unique flavour ingredients to make our authentic Jerk Chicken. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Jerk Seasoning pot, a Jerk Paste pot and a Chicken Stock pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Jerk Chicken in just 20 minutes.

- boneless chicken thighs
- Basmati rice
- tin light coconut milk
- tin black-eyed beans
- lime (optional)
Our 20 minute recipe
Heat the oven to 200C/180C fan/gas 6 and boil 150ml water in the kettle. Put the chicken thighs in a big bowl and sprinkle the Jerk Seasoning all over. Mix well and then spoon in the Jerk Paste. Make sure the chicken becomes nicely coated in both the seasoning and the paste. (It’s easier to do this with your hands or by putting these all in a ziploc bag and mixing around.)
Place the marinated chicken pieces on a baking tray with the lime quarters (if using) and cook in the oven for 20 mins. Meanwhile, see step 4.
Fry the onion with 1 tbsp oil in a large lidded pan over high heat for 1 min. Then add the rice, coconut milk, 150ml boiling water and the Chicken Stock to the pan. Gently bring to the boil, then cover with a lid, turn the heat down to low and simmer for 10 mins. Then stir in the black-eyed beans, cover again and leave off the heat for 5 mins until all the liquid has been absorbed.
To serve, squeeze the roasted lime quarters over the chicken pieces (if using) and divide your “rice and peas” between two plates. Finally, top with the chicken.

Simply wow, the chicken slightly spicy cooked perfectly. The slow cooked rice was an ideal side for this dish. Add a few fresh tomatoes and enjoy this delicious meal.

Chicken was tasty but I wasn't so keen on the coconut rice. My husband liked it though. Just my personal taste. Also had to cook rice for longer as liquid wasn't soaked up
