Our 20 minute recipe

  • 1.

    Marinate the chicken

    Heat the oven to 200C/180C fan/gas 6 and boil 150ml water in the kettle. 

    Mix the JERK SEASONING and the JERK PASTE together in a mixing bowl with a drop of oil, then add the chicken thighs and mix well to fully coat. 

  • 2.

    Roast the chicken

    Place the chicken on a baking tray with the lime wedges (if using) and cook in the oven for 20 mins. 

  • 3.

    Meanwhile, make the rice

    Heat a little oil in a non-stick pan over medium-high heat and then fry the onion for 2 mins to soften. 

    Add the rice, coconut milk, 150ml boiling water and the CHICKEN STOCK to the pan and mix well.  Bring it to the boil, then cover with a lid, turn the heat down to low and let it simmer for 10 mins. 

  • 4.

    Add the beans

    Stir the kidney beans into the rice then cover it again with a lid and leave it off the heat for 5 mins until all the liquid has been absorbed.

  • 5.

    Serve!

    To serve, squeeze the roasted limes over the chicken and serve with your “rice and peas” and some seasoned sweetcorn on the side (if using).

I love this meal but preferred the original version, with black eyed beans and without corn. Made it with an additional side dish of roasted butternut squash, cumin and pumpkin seeds, broccoli and feta. Delicious.

Very good, I recommend a scotch bonnet while cooking the rice and a bit of cayenne in with jerk seasoning. And add salt to taste at the end. Easy and nice overall though

I have no idea why other are saying this is bland...it really wasn’t. Excellent spicy flavours on the chicken (breast, not thigh). Rice very tasty and so simple. Corn on the cob on the side. Ace ???? We cooked the chicken and lime in a Pyrex dish with lid. Has to use long grain, so added a little more water to get the right bite. To the naysayers I say “Pah! Your tastebuds must be like leather! ‘Tis a magnificent dish, worthy of great praise and wonderment.”

The chicken is great and I did ours with corn on the cob instead of tinned corn.. Only thing is the rice is very bland so you need to add some spices and seasoning to it in order to get some flavour!

i re order this regularly and change what sides i have, the spice mix is just right, my favourite way to do this to get the most flavour on the chicken is to dice it and marinate then skewer it and cook like kebabs, those saying the rice lacked something??? i don't do the corn as the recipe i add it to my rice with kidney beans and diced chorizo sautés it all together so the chorizo oil coats the rice to make a spicy rice with a bit of oomph my whole family love this version i call it "dirty rice" !

Used salmon instead of chicken. Delicious. However I dont think I like coconut milk and the rice was slimy. And baking the limes made them bitter, which ruined the salmon. Might get again but do my own thing with the rice and use raw limes.
