Your shopping list for 2 servings:

  • 200ml tin coconut milk
  • 1 onion
  • 2 tomatoes
  • 120g rice
  • 1 cauliflower
  • 200g tin chickpeas
  • naan bread (optional)
  • 200g tin chopped pineapple (optional)

Our 20 minute recipe

  1. Cook the rice!

    Cook the rice as per pack instructions!

  2. Create the curry bas

    Heat 1 tbsp of oil in a pan over medium-high heat and add the onion, tomato and cook for 3 mins. 

    Stir in the GOAN PASTE and cook for 2 mins. 

    Stir in the COCONUT PASTE and then pour in the coconut milk. Mix well and gently bring to the boil.

  3. Add the vegetables 

    Add the cauliflower, chickpeas and 100ml water to the pan, bring it back to the boil and then reduce the heat to medium-low and let it simmer for 8 mins, or until the cauliflower is tender. 

    Stir the SPICE BLEND into the curry along with the pieces of pineapple (if using). Let it cook for 2 more mins.

  4. Serve!

    Serve the curry over your rice with a squeeze of lime (if using).
