A light and healthy favourite of the SimplyCook team, this dish is perfect for a warm summer's day. The star of this dish is Cyprus' top cheese - halloumi . Made from goat's and sheep's milk, it's excellent for frying or grilling because it won't melt! Our Pistou blend is the perfect partner for halloumi, seasoning it with basil, olive oil, and Italian cheese and the Harissa seasoning drizzled over everything really lifts the flavours with lemon, garlic, paprika, chilli, caraway and coriander. With very simple fresh ingredients to add and delicious blends of pastes in the pots, this iron-rich veggie dish is as easy on the purse strings as it is on the waistband. Swap couscous for the deliciously grainy quinoa to make this a gluten-free dish!

Cook our delicious Grilled Halloumi Salad in just Minutes

We’ve sourced and blended all of the unique flavour ingredients to make our authentic Grilled Halloumi Salad. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Pistou pot, a Harissa Seasoning pot and a Vegetable Stock pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Grilled Halloumi Salad in just 20 minutes.

How Our Recipes Kits Work

We provide flavour ingredients:

  • Pistou
  • Harissa Seasoning
  • Vegetable Stock

Your shopping list:

cherry tomatoes
pine nuts
couscous (or quinoa if gluten-free)
1 small bunch
flat leaf parsley(optional)

Our 20 minute recipe

  • 1.

If making this dish gluten free with quinoa, bring 300ml water to the boil in a lidded pan and add the Vegetable Stock. Add the quinoa, bring to the boil, then cover, turn down the heat and simmer for 15 mins until all the stock has been absorbed. Or if you’re doing couscous, pour 200ml boiling water into a heatproof jug and add the Vegetable Stock. Put the couscous into a large bowl and pour the stock over. Cover with cling film and leave to soak for 5 mins.

  • 2.

Heat a griddle pan or a wide frying pan over high heat. Coat the halloumi and courgette in the Pistou paste. Add a drizzle of oil to the pan and then place the vegetables in and brown them on both sides. (You may need to do this in batches.) Then set them aside and keep warm.

  • 3.

Meanwhile, uncover the couscous and stick a fork through it to fluff it up. Toast the pine nuts in a dry frying pan for 2 mins, or until golden brown. In a bowl, combine 2 tbsp oil, the juice of one lemon and the Harissa Seasoning to make a dressing.

  • 4.

Add the dressing to the couscous/quinoa along with the cherry tomatoes, toasted pine nuts and parsley, (if using). Serve the quinoa or couscous mixture topped with the grilled halloumi and courgette.

Charlotte - Apr 25, 2018

Great recipe. Really tasty and filling

David - Apr 22, 2018

Fresh and tasty halloumi and courgette salad

Jen - Apr 20, 2018

Quite nice although I feel the portion of pistou pasta was insufficient. Another thing is I found it quite salty. (I recognise halloumi is rather salty but I love it and this was too much even for me).

Suzy - Apr 19, 2018

This was fantastic. I will do it again.

Katherine - Apr 18, 2018

Pistou paste very salty. But tasty overall.

Mary - Apr 14, 2018

Really lovely - we used the orange too and it was a lovely fresh taste!

Eve - Apr 09, 2018

This was surprisingly delicious. Bit of a faff prepping, but once done was really easy to make - although there did seem to be a lot of courgette! The dressing really made it taste amazing.

Kathryn - Apr 04, 2018

Was pretty tasty, but not one of my favourites. Made as a side dish to the lamb kofte kebabs on here which worked well.

Nina - Feb 28, 2018

Huge portion!

Sarah - Feb 28, 2018

Really enjoyed this.

Mary - Feb 25, 2018

Loved it

Karen - Feb 22, 2018

Great love the simply made flavour

James - Feb 21, 2018

Added shredded chicken. Really good and suprisingly filling. Nice spices.

Camila - Feb 15, 2018

Adjusted as don’t like courgettes otherwise ok

Patricia - Feb 12, 2018

Don't really need a kit for this one, just cover the halloumi and courgette in pesto. Everyone has vegetable stock in store cupboard so feel this is an unnecessary ingredient when something more interesting could be added.

Olivia - Feb 11, 2018

Really easy to whip up and the flavours are lovely. I left out the cherry tomatoes and pine nuts as a personal preference.

Anne - Feb 10, 2018

Not that inspiring and could easily be done without the spice mixes

Denise - Jan 31, 2018

Erica - Jan 28, 2018

Incredible tastes and so simple to make

Joe - Jan 27, 2018

Much more delicious than I’d expected. Amazing!

Wendy - Jan 12, 2018

It was the recipe I was least sure about so far but my husband and I both loved it!
