A light and healthy favourite of the SimplyCook team, this dish is perfect for a warm summer's day. The star of this dish is Cyprus' top cheese - halloumi . Made from goat's and sheep's milk, it's excellent for frying or grilling because it won't melt! Our Pistou blend is the perfect partner for halloumi, seasoning it with basil, olive oil, and Italian cheese and the Harissa seasoning drizzled over everything really lifts the flavours with lemon, garlic, paprika, chilli, caraway and coriander. With very simple fresh ingredients to add and delicious blends of pastes in the pots, this iron-rich veggie dish is as easy on the purse strings as it is on the waistband. Swap couscous for the deliciously grainy quinoa to make this a gluten-free dish!

Cook our delicious Grilled Halloumi Salad in just Minutes

We’ve sourced and blended all of the unique flavour ingredients to make our authentic Grilled Halloumi Salad. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Pistou pot, a Harissa Seasoning pot and a Vegetable Stock pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Grilled Halloumi Salad in just 20 minutes.

How Our Recipes Kits Work

We provide flavour ingredients:

  • Pistou
  • Harissa Seasoning
  • Vegetable Stock

Your shopping list:

cherry tomatoes
pine nuts
couscous (or quinoa if gluten-free)
1 small bunch
flat leaf parsley(optional)

Our 20 minute recipe

  • 1.

If making this dish gluten free with quinoa, bring 300ml water to the boil in a lidded pan and add the Vegetable Stock. Add the quinoa, bring to the boil, then cover, turn down the heat and simmer for 15 mins until all the stock has been absorbed. Or if you’re doing couscous, pour 200ml boiling water into a heatproof jug and add the Vegetable Stock. Put the couscous into a large bowl and pour the stock over. Cover with cling film and leave to soak for 5 mins.

  • 2.

Heat a griddle pan or a wide frying pan over high heat. Coat the halloumi and courgette in the Pistou paste. Add a drizzle of oil to the pan and then place the vegetables in and brown them on both sides. (You may need to do this in batches.) Then set them aside and keep warm.

  • 3.

Meanwhile, uncover the couscous and stick a fork through it to fluff it up. Toast the pine nuts in a dry frying pan for 2 mins, or until golden brown. In a bowl, combine 2 tbsp oil, the juice of one lemon and the Harissa Seasoning to make a dressing.

  • 4.

Add the dressing to the couscous/quinoa along with the cherry tomatoes, toasted pine nuts and parsley, (if using). Serve the quinoa or couscous mixture topped with the grilled halloumi and courgette.

When you're making it, you kind of get the feeling that its going to be a disaster, or some boring salad dish. But sit down and chomp on this one and its an outstandingly tasty!

Pleasant, if not unusual flavour on halloumi and courgette. Really liked the flavours in cous cous. The whole meal didn’t knock my socks off, but made a nice quick to prepare evening meal after a hard day at work. I would recommend it.

Inga - Nov 12, 2018

I love halloumi, but this dish is not my favourite.

Lisa - Nov 10, 2018

We added red peppers and kept the harissa as a final drizzle. So tasty!

Inga - Nov 07, 2018

I love halloumi, but this dish is not my favourite.

Sarah - Nov 06, 2018

Amazing, one of my favourite boxes so far.

Sarah - Nov 06, 2018

Tasty! Really enjoyed this.

Erin - Oct 26, 2018

The pistou didn’t have any basil flavour like I expected, instead it was an overpowering artificial cheese taste, not my favourite!

Scarlett - Oct 23, 2018

I would griddle the veg/cheese in as little oil as possible. I used a spray oil. Overall very tasty

Carol - Oct 19, 2018

Courgettes were too soggy, rest of the recipe was delicious

Renee - Oct 17, 2018

Tastes incredible but a bit too complex for us I think - we ended up burning the pine nuts :(

Catharine - Oct 17, 2018

Delicious and totally different loved it

Beth - Oct 16, 2018

Was nice apart from the oil sauce on top was unnecessarily hot and made it so you couldn't taste anything else

Sandra - Oct 14, 2018

Kid's favourite so far

Barbara - Oct 04, 2018

Delicious I'm not keen on Halloumi but with the other ingredients it came to life

Maia - Oct 01, 2018

So tasty! Didn't need all the oil - I didn't put in any additional and it tasted just fine. Could do with a bit more harissa as needed a little bit more of a kick.

Debbie - Oct 01, 2018

I liked it but my siblings didn't

Lisa - Sep 27, 2018

Very nice! Had ours with cous cous. Very tasty indeed!

Rachel - Sep 23, 2018

Wonderful fresh flavours, really good with fresh coriander on top.

Barbara - Sep 19, 2018

Couscous was tasty but wouldn’t order again - the courgette didn’t really work for us.

Maggie - Sep 16, 2018

Meatless Mondays! The cheese & Quinoa ????????????

Susan - Sep 15, 2018

I couldn’t seem to get the couscous right.

Paul - Sep 15, 2018

We preferred our Courgettes cut as circular slices as we felt it looked better than when cut lengthways on your photo.

Paul - Sep 13, 2018

Really enjoyed this, it was a bit messy spreading the paste on the cheese and courgettes maybe a dried powder would be easier? But that aside I'd definitely have this again.

Sarah - Sep 13, 2018

Really tasty...great flavours. Used Bulgar wheat.

Justine - Sep 07, 2018

Love the flavour

charlotte - Sep 04, 2018

Again a slightly odd mix of flavours - felt like it could do with something fresh with it to counteract the saltiness and strong harissa taste

Marion - Sep 03, 2018

Wasn’t sure I’d like this but definitely one of my favourites. Great balance of flavours and really packs a punch!

Maggie - Aug 31, 2018

My Go To MEATLESS MONDAY meal! Yummy ????

Lydia - Aug 28, 2018

Really nice but too salty halloumi is salty enough you don’t don’t need any extra
