Grilled Halloumi Salad4.1/5 (BASED ON 1305 reviews)
A light and healthy favourite of the SimplyCook team, this dish is perfect for a warm summer's day. The star of this dish is Cyprus' top cheese - halloumi . Made from goat's and sheep's milk, it's excellent for frying or grilling because it won't melt! Our Pistou blend is the perfect partner for halloumi, seasoning it with basil, olive oil, and Italian cheese and the Harissa seasoning drizzled over everything really lifts the flavours with lemon, garlic, paprika, chilli, caraway and coriander. With very simple fresh ingredients to add and delicious blends of pastes in the pots, this iron-rich veggie dish is as easy on the purse strings as it is on the waistband. Swap couscous for the deliciously grainy quinoa to make this a gluten-free dish!
Cook our delicious Grilled Halloumi Salad in just Minutes
We’ve sourced and blended all of the unique flavour ingredients to make our authentic Grilled Halloumi Salad. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Pistou pot, a Harissa Seasoning pot and a Vegetable Stock pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Grilled Halloumi Salad in just 20 minutes.
How Our Recipes Kits Work
We provide flavour ingredients:
- Harissa Seasoning
- Vegetable Stock
Your shopping list:
- cherry tomatoes
- pine nuts
- couscous (or quinoa if gluten-free)
- 1 small bunch
- flat leaf parsley(optional)
Our 20 minute recipe
If making this dish gluten free with quinoa, bring 300ml water to the boil in a lidded pan and add the Vegetable Stock. Add the quinoa, bring to the boil, then cover, turn down the heat and simmer for 15 mins until all the stock has been absorbed. Or if you’re doing couscous, pour 200ml boiling water into a heatproof jug and add the Vegetable Stock. Put the couscous into a large bowl and pour the stock over. Cover with cling film and leave to soak for 5 mins.
Heat a griddle pan or a wide frying pan over high heat. Coat the halloumi and courgette in the Pistou paste. Add a drizzle of oil to the pan and then place the vegetables in and brown them on both sides. (You may need to do this in batches.) Then set them aside and keep warm.
Meanwhile, uncover the couscous and stick a fork through it to fluff it up. Toast the pine nuts in a dry frying pan for 2 mins, or until golden brown. In a bowl, combine 2 tbsp oil, the juice of one lemon and the Harissa Seasoning to make a dressing.
Add the dressing to the couscous/quinoa along with the cherry tomatoes, toasted pine nuts and parsley, (if using). Serve the quinoa or couscous mixture topped with the grilled halloumi and courgette.

I think this might be a new favourite. Even though it was -3 outside I enjoyed the fresh flavours. I have never cooked Halloumi at home and now I am no longer afraid. I enjoyed it for leftover lunch as well.

Flavours are not bad...I love halloumi so loved this but didn’t find it very filling at all?
Belinda - Jan 21, 2019
Hm, it was ok. Bit of a faff, especially on a Monday evening. Clearly I need to start reading recipes before ordering as what I want is something quick but still tasty. This was ok but I wouldn’t order again.
Diane - Jan 20, 2019
Awful tasteless and bland
Jayne - Jan 20, 2019
Delicious but be prepared for a lot of washing up afterwards ????

Pretty unexciting. We like halloumi and pine nuts but not convinced the recipe or pots added anything much.
Jo - Jan 11, 2019
With the Harissa, it's not entirely fair to call this a non-spicy dish as that gives it quite a kick! Not a problem for me, but might surprise others who picked it ignorant of that fact!
Seonaid - Jan 10, 2019
Loved this meal. Delicious flavours
stacey - Jan 05, 2019
Lovely dish to make in summer for bbq
Nick - Jan 04, 2019
Bit fiddly but nice
Rianna - Jan 03, 2019
There were too many intense flavours clashing with one another on this. I think the flavour on the quinoa could of been more similar to vegetable stock as less intense, the 3rd spice wasn’t really needed at all. But this is only one person’s thoughts. Thank you for the meals though
Carolyn - Jan 02, 2019
A little more fiddly to cook than some!
Jen - Jan 01, 2019
Loved it, will definitely do this dish again, maybe add peppers and onions to it next time.
David - Dec 22, 2018
Having eaten it, I reckon some fresh mint would work very nicely along with the parsley. Also added a grilled pepper.
