Our 20 minute recipe

  1. Cook the rice

Boil 300ml water in a non-stick lidded saucepan then add the CHICKEN STOCK and mix well. Add the rice, bring it back to the boil, then reduce the heat to low, cover and cook for 10-12 mins.

  2. Pan-fry the meatballs

Heat a little oil in a pan over medium-high heat, then fry the onion for 2 mins.

Add the meatballs, sprinkle the CAJUN SEASONING over them and fry until they've browned on all sides. (Drizzle a little more oil over them if looking dry).

  3. Make the sauce

Add the pepper and fry for 2 mins.

Stir in the chopped tomatoes, and the HOT PEPPER SAUCE, then cook over a medium heat for 8-10 mins. If you'd prefer it a bit saucier, mix 50ml water into the sauce.

Taste the sauce and add 1 tsp of sugar, if desired.

  4. Serve!

Serve the rice with the meatballs and sauce on top.

The peppers need a bit longer than in the recipe, I think. They were a little undercooked.

Very easy to make. Reasonably spicy. Made it for myself and will definitely do 2 nights. Tasty and would recommend it.

I loved these was a bit disappointed that the recipe calls for ready made meat balls. I would have liked to make my own. Very very tasty and I would buy again

This was really tasty. I don't eat beef so I bought 2 packs of Linda McCartney Vegetarian 'Meatballs' (24 medium sized balls) and they were a delicious addition to the dish. I always make a 2 meal kit into 4 meals and this worked really well. I added an extra pepper and used a 400g tin of chopped tomatoes. I added sriracha sauce too as we like it hot and only used a small pinch of sugar (to help balance out the acidity of the tomatoes). We also indulged in a sprinkle of cheese on top ;) Another yummy dish!

Fruity and hot. Nice and warming.

So delicious. Not particularly spicy in my opinion. I used a full tin of chopped tomatoes- without this there definitely would not have been enough sauce.

Not overly tasty.

Nicole - 28th June 2020

Very nice. We used a whole (400g) tin of chopped tomatoes as we couldn’t buy smaller and it perhaps diluted the flavour of the sauce a bit too much.

Sauce was ok, meatballs pretty bland and you didn’t use any spice mix within the meat.
