We bring these all together in a recipe kit, which consists of 3 flavour pots; a Keralan Curry Paste pot, a Garlic Paste pot and a South Indian Garnish pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Keralan Coconut Curry in just 20 minutes.

Our 20 minute recipe

  • 1.

    Fry the paste 

    Heat a little oil in a pan over medium-high heat and then fry the onion for 5 mins. 

    Add the KERALAN CURRY PASTE and a splash of water and fry for 2 mins.

  • 2.

    Add the chunky veg

    Add the courgette, the carrot, a splash of water and the GARLIC PASTE and cook for 3 mins.

  • 3.

    Make the sauce

    Pour in the coconut milk and gently bring it to the boil. 

    Then reduce the heat to medium-low and let it simmer for 5 mins. 

    Add the green beans (if using) and let it simmer for 5 more mins.

  • 4.

    Finishing touches 

    Add the tomato (if using) and the SOUTH INDIAN GARNISH and let it cook for 2 more mins, or until the vegetables are tender. 

    Meanwhile, heat the rice according to pack instructions.

  • 5.

    Serve 

    Serve the rice in bowls with the Keralan curry over the top.

My family are vegetarian and although registered as such I received the recipe card for the prawn version of this dish. I substituted quorn pieces for the prawns and found the ingredients could easily be doubled without losing any taste. Substituted grilled pepper for courgettes.
