Our latest dish is a delicate curry featuring the classic spices grown in Kerala - mustard seeds, turmeric and warm spices like cinnamon and clove. Seafood is inabundance off the coconut-tree lined coast so we're going with king prawns. Kerala’s rich trading heritage means that fusion and influences from other culturescan often be seen in their modern day dishes, which is why you'll see courgette in our version. We’ve sourced and blended all of the unique flavour ingredients to make our authentic Keralan Prawn Curry. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Keralan Paste pot, a Garlic Paste pot and a South Indian Garnish pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Keralan Prawn Curry in just 20 minutes.

Your shopping list:

large king prawns cooked or raw
coconut milk
Basmati rice

Our 20 minute recipe

  • 1.

    Fry the paste

    Cook the rice according to pack instructions, then keep warm.

    Heat a little oil in a large pan over medium high heat and then fry the onion for 5 mins.

    Add the KERALAN PASTE and a splash of water and fry for 2 mins.

  • 2.

    Add the veg

    Add the courgette slices and the GARLIC PASTE and cook for 2 mins. 

  • 3.

    Make the sauce

    Pour in the coconut milk and gently bring it to the boil. Then reduce the heat to medium-low and let it simmer for 5 mins.

    Add the prawns and cook for 2 mins (if they're cooked) or 3-4 mins, if raw. 

  • 4.

    Finishing touches

    Stir through the SOUTH INDIAN GARNISH and cook for 2 more mins or until the prawns are cooked (they should be firm and opaque in the middle). 

  • 5.


    Serve the rice in bowls with the Keralan curry over the top.

Added cherry tomatoes, green beans and peppers to this dish just to add some more variety. Only used 180g of prawns and 1 courgette though. I thought this dish was lovely, which I wasn’t expecting (this is my first review here). If you’re worried about it being too watery, just let it evaporate out — although I didn’t personally think it was watery.
