Grated courgette is flash fried with chilli and garlic, then enriched with white wine and then seasoned with our blend of crispy onion and sun-dried tomato with leek and Sicilian lemon oil. Ricotta adds a creaminess to the dish and a little bit of pan-fried courgette provides a crunchy, savoury garnish to top off this light linguine dish.

    Get the pasta on 

    Cook the pasta according to pack instructions, reserving a cup of water before you drain it. 

    Heat a little oil in a wide pan over medium-high heat, then add a handful of courgette and let it cook until golden brown. Remove this and put it on some kitchen paper - this will be your crispy courgette garnish.

    Make the sauce 

    In the same pan, add a little more oil and the CITRUS & CHILLI PASTE and fry for 10 secs then add the rest of the courgette and cook for 1 minute. 

    Add the WHITE WINE PASTE and a splash of the pasta cooking water and cook for 2 mins. Add the POMODORO SEASONING and cook for 1 min then turn off the heat.

    Finishing touches 

    Once it's cooled slightly, mix 1 heaped tbsp of ricotta into the pan. 

    Use tongs to put the drained pasta into your courgette sauce and toss to fully mix it, adding a little more pasta cooking water if you need to loosen the sauce.

    Serve the pasta in bowls with your reserved golden brown courgette garnish on top with a squeeze of lemon (if using) and some extra little dots of ricotta here and there.

This recipe had some lovely flavours; however, my only qualm is that it didn't make enough sauce for my personal preference. Also the courgettes didn't go very crispy so it may be worth frying them a bit longer next time. Would definitely order this again though!
