Our 20 minute recipe

  1. Fry the chicken

Heat a little oil in a large pot over medium heat and gently fry the butternut squash for 2 mins.

Add the LAKSA PASTE and the chicken. Mix well and stir fry for 3 mins.

  2. Add the coconut milk

Boil 350ml water in a kettle and then pour it into the pot.

Add the CHICKEN STOCK and mix well.

Then add the coconut milk, stir well and bring it to the boil, then reduce the heat to medium-low and let it simmer for 7-8 mins.

  3. Add the noodles

Add the rice noodles, asparagus spears and MALAY GARNISH to the laksa and simmer for 3 more mins or until the asparagus is tender.

  4. Serve!

Ladle your laksa into deep bowls and sprinkle with coriander (if using) and a squeeze of lime.

I recommend soaking the dry vermicelli in hot water prior to adding it to the dish, otherwise the noodles will soak up all the lovely sauce.

Delicious. Made it with a slightly thicker sauce - beautiful

Kate - 6th July 2020

Found this a bit bland and lacked the sweet element and was watery rather than silky. We wondered if this was because coconut yoghurt was used to replace coconut milk. Will try again with coconut milk.

Super easy very delicious, I used very thin white noodles which I cooked separately. Which I probably wouldn’t do again.

Added extra cream for the kids and crispy onions ????????

Andrew - 28th June 2020

The noodles will soak up all the liquid if your planing on cooking extra for leftovers. I recommend keeping the noodles in a seperate container.

Absolutely yum! Substituted asparagus for mange tout and broccoli and halved the butternut squash so I could add carrots. Really lovely. Great flavours, easy to make and not too much washing up! Haha
