Folded flour tortillas are filled with cumin and chipotle spiced beef and black beans, oozing with melted cheese. Griddled until crispy, these quesadillas are best when paired with the traditionally zingy 'pico de gallo' salsa and dipped into a cooling Mexican BBQ style soured cream. A family favourite taken to another level by the classic sides, this is an all-round flavour sensation of different tastes and textures.

Our 30 minute recipe

  1. Cook the filling

    Heat the oven to 160C/fan 140C/gas 3.

Fry half of the red onion in a pan with 1 tbsp oil for 3-4 mins to soften.

Turn up the heat and add the beef mince. Fry for 3-4 mins, until lightly browned.

Add the QUESADILLA PASTE and half of your chopped tomatoes and mix well. Let it cook for 5 mins.

Tip the black beans in (if using).

  2. Make your condiments

For the salsa, put the other half of the red onion into a bowl along with the rest of your chopped tomatoes. Mix in the PICO DE GALLO SALSA and keep aside.

For the dipping sauce, stir the MEXICAN BBQ SAUCE into the soured cream and keep aside.

  3. Cook the quesadillas

Heat a little oil in a large non-stick frying pan over medium heat. Place a tortilla in the pan and, on one half of the tortilla, layer grated cheese, then spread a spoonful of beef mince on top, ( add some of your salsa, if desired) then another layer of grated cheese.

Fold the empty side of the tortilla over to make a half-moon shape and flatten it down with a spatula.

Cook until lightly golden and crisp then flip it and cook the other side for 2 mins. Then place in the oven on a tray to keep warm while you cook the others.

  4. Serve!

Cut the quesadillas into wedges and serve with salsa, the dipping sauce and guacamole (if having).

Swapped the beef for chicken and every aspect of the meal was delicious. We had it was extra salad and it was a very filling meal, more than enough for two. I don’t like anything too hot, but my partner does, but this was just perfect for both of us. Tasty without being too spicy.

The flavours were lovely but I was not keen on it with beef mince. Might try chicken instead

Used leftover roast chicken. Gorgeous. Would be lovely done for a party/buffet. Cut the half tortilla in 4 instead of two to make more smaller ones

Maria - 29th May 2020

Very filling, maybe 1 or 1.5 enough but so tasty. Also better with guacamole

Martin - 28th May 2020

Really tasty - only downside being the tortillas which I struggled to get to the right colour, and also ended up a little over-filled so it became a knife and fork job!

Very delicious, my husband loved it.
