Mole (pronounced mo-leh) from Puebla, Mexico is traditionally a deep, rich flavoured one-pot with ancho chilli, chipotle and chocolate, which gives the sauce its dark colour. Our quick version of tender pulled chicken takes inspiration from the Mole sauce, making for a tasty burger  filling. The chipotle slaw adds crunch and colour to the toasted brioche bun and the paprika sweet potato fries tie it all together nicely!

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Mexican Seasoning pot, a Chipotle Paste pot and a Mole Sauce pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Mexican Pulled Chicken in just 25 minutes.

Your shopping list for 2 servings:

  • 4 boneless chicken thighs (or 2 chicken breast fillets)
  • 2 brioche buns
  • half pointed white cabbage
  • 2 carrots
  • 3Tbsp mayonnaise
  • 2 medium sweet potatoes

Our 25 minute recipe

  1. Heat the oven to 220C/200C fan/gas 7.

    Half fill a pan with boiling water. Add the chicken and cook (poach) over a medium-low heat for 10 mins.

    Meanwhile, toss the sweet potatoes with some oil and the MEXICAN SEASONING on a baking tray and cook in the oven for 20 mins. Meanwhile start step 2. 

  2. Prep the slaw

    Add the CHIPOTLE PASTE (to taste) to the mayonnaise, then add the cabbage and carrots

  3. Make the pulled chicken

    When just cooked, remove the chicken and use two forks to shred it on a board.

    Empty the pan and reheat it with a little oil. Fry the MOLE SAUCE gently, then add the shredded chicken and stir fry for 2 mins. Add 50ml water then stir for 2 mins, or until the water is absorbed. 

  4. Serve!

    Warm the buns in the oven, then fill them with "pulled" chicken and some chipotle slaw. Serve with wedges and extra slaw on the side.
