Mole (pronounced mo-leh) from Puebla, Mexico is traditionally a deep, rich flavoured one-pot with ancho chilli, chipotle and chocolate, which gives the sauce its dark colour. Our quick version of tender pulled chicken takes inspiration from the Mole sauce, making for a tasty burger  filling. The chipotle slaw adds crunch and colour to the toasted brioche bun and the paprika sweet potato fries tie it all together nicely!

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Mexican Seasoning pot, a Chipotle Paste pot and a Mole Sauce pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Mexican Pulled Chicken in just 25 minutes.

  • 500g boneless chicken thighs
  • 3 sweet potatoes (around 600g)
  • 80g mayonnaise
  • 250g pointed white cabbage
  • 2 carrots
  • 4 brioche buns

Our 25 minute recipe

  1. Poach the chicken

    Heat the oven to 220C/200C fan/gas 7.

    Bring a non-stick saucepan half-filled with water to the boil, then turn it down to a medium low simmer, and put the chicken in the pan to gently poach for 10 mins.

    Meanwhile, toss the sweet potatoes with 1 tbsp of oil and the MEXICAN SEASONING on a baking tray and cook in the oven for 20 mins. Next, get started with step 2. 

  2. Prep the slaw

    Mix half of the CHIPOTLE PASTE with the mayonnaise in a salad bowl. Try it and add more mayo if it's too spicy or add more Chipotle Paste for more heat.

    Next mix the cabbage and carrots into the dressing and keep aside. 

  3. Make the pulled chicken

    When just cooked, remove the chicken from the pan and put it on a chopping board. Pour away the water. Use two forks to "pull" the chicken pieces apart, roughly shredding them.

    Return the pan to the hob and heat a little oil over a medium heat, then add the MOLE SAUCE. Stir quickly, then add the shredded chicken and stir fry for 2 mins.

    Add 50ml water to loosen the sauce, then stir for 2-3 mins until the water has been absorbed. 

  4. Serve!

    When the fries are almost done, halve the buns and warm them in the oven. Then fill the buns with your pulled chicken and add some chipotle slaw on top. Serve with the wedges and some extra slaw on the side.

This is lush! Needed a little more cream. I used less prawns and added the broccoli as well the asparagus. We found the broccoli was tastier as the florets held a lot more of the juices. Maybe a splash of lemon would have been the cherry on top!

Well that was a hit, other than the chicken, started with thighs as per instructions, not enough meat for 1 burger let alone 4, so the dog got that and used chicken breast instead. Everyone loved it, made extra chipotle mayo too, great hit.
