A Brazilian recipe that’s hugely popular amongst those that live by the coast. The huge flavour is added through the jalapenos, cumin seeds and turmeric root among other spices which we have pounded into a fragrant paste. This is what brings a warm, spicy and sweet flavour to the coconut milk while the aromatic garnish completes the dish.

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Garlic & Coconut pot, a Brazilian Paste pot and a Moqueca Garnish pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Moqueca in just 20 minutes.

  • 120g Basmati rice
  • 1 red/yellow pepper
  • 1 onion
  • 3 tomatoes
  • 200ml coconut milk
  • 200g butternut squash

Our 20 minute recipe

  1. Get the rice on

    Bring 250ml of water to the boil in a lidded saucepan and add the rice. Reduce the heat to low, cover with a lid and simmer for 10-12 mins until the rice is tender. Or cook as per packet instructions.

  2. Fry the vegetables

    Heat 1 tbsp of oil in a large pan or casserole dish over a medium heat and when hot, add the onion and stir-fry for 2- mins to soften.

    Add the BRAZILIAN PASTE to the pan, stir well and then add the butternut squash, the pepper and the tomatoes.

    Stir fry for 2 mins then add the GARLIC AND COCONUT, stirring to coat the vegetables.

  3. Create the sauce

    Add the coconut milk along with 150ml water to the pan and bring it to a gentle boil and then let it simmer for 6-7mins, gently mashing the tomatoes to soften them and blend the flavours together.

  4. Finishing touches and serve!

    Sprinkle the MOQUECA GARNISH over the pan and stir through.

    Serve the rice in bowls, spoon the Moqueca on top and serve!

Really liked this, it's quite spicy which suits me. It reminded me of a thai curry. It would of benefited from a bit more sauce when mixed with the rice. I added the lime which made it even tastier.

Really tasty and was nice to try a coconut milk-based curry that wasn’t overpowered by lemongrass. This had a really nice balance of flavours and no lemongrass (I think!). The only thing I would say is the butternut squash needs cooking for way longer, I don’t think it wouldve tasted right had we cooked it using the time dimly cook allocated
