Moqueca4.2/5 (BASED ON reviews)
A Brazilian recipe that’s hugely popular amongst those that live by the coast. The huge flavour is added through the jalapenos, cumin seeds and turmeric root among other spices which we have pounded into a fragrant paste. This is what brings a warm, spicy and sweet flavour to the coconut milk while the aromatic garnish completes the dish.

Our 20 minute recipe
Get the rice on
Bring 250ml of water to the boil in a lidded saucepan and add the rice. Reduce the heat to low, cover with a lid and simmer for 10-12 mins until the rice is tender. Or cook as per packet instructions.
Fry the vegetables
Heat 1 tbsp of oil in a large pan or casserole dish over a medium heat and when hot, add the onion and stir-fry for 2- mins to soften.
Add the BRAZILIAN PASTE to the pan, stir well and then add the butternut squash, the pepper and the tomatoes.
Stir fry for 2 mins then add the GARLIC AND COCONUT, stirring to coat the vegetables.
Create the sauce
Add the coconut milk along with 150ml water to the pan and bring it to a gentle boil and then let it simmer for 6-7mins, gently mashing the tomatoes to soften them and blend the flavours together.
Finishing touches and serve!
Sprinkle the MOQUECA GARNISH over the pan and stir through.
Serve the rice in bowls, spoon the Moqueca on top and serve!

No real flavour came through, just spice

This was delishhhh! Made a few alterations to the recipe though. Added 2 sweet potato’s, a courgette and a yellow pepper (roasted beforehand). Didn’t add the water but 400ml of coconut milk instead. Also a few green chillies as I like my spice. Turned out amazing with rice and yogurt on the side. Can’t wait to have it again!

Not my favourite, quite spicy so added 1/4 can of tinned tomatoes & also added extra coconut milk instead of water. Won’t order again.

Really easy to make and very tasty. Next time I wouldn’t add the 150mls of water.

Spices only allow for 2 servings had to wing it with additional raw-al-hanout to bulk it out for 4

Found this a bit boring but would try again with the addition of a selection of different vegetables for added interest. Also it didn’t turn out like the picture, very watery.

Ridiculously delicious, my favourite so far. Best to cook the peppers earlier than instructed or they won't be cooked. I don't like butternut squash so subbed in cauliflower which I pre-cooked. This worked very well. I didn't add the water into the sauce, it would have been too runny.
Rosie - Feb 22, 2019
One of the best so far!
Alice - Jan 24, 2019
Yass, gorgeous. Got bored of all the butternut squash veggie options, so subbed for new potatoes and cauliflower. So lovely. Will get again.

You have to simmer it for a lot longer than it suggests, but it is so worth it. By far the tastiest thing I've ever made.

Delicious! Nice little bit of spice!
Samantha - Jul 27, 2018
Not very flavoursome. It felt very healthy which was positive but very much like it was missing something. I wouldn’t make it again.
