This works well with our smoky spicy rice, which is tossed with sweetcorn and roasted red peppers. The element that brings it all together is a zingy coriander and green chilli spiked yoghurt – our take on the classic Peruvian “green sauce"!

Simply follow our recipe, adding a few items from your fridge, to cook this delicious Peruvian Chicken in just 30 minutes.

Your shopping list for 2 servings:

  • 4 chicken thighs (bone in, skin on or off)
  • 1 small red onion
  • 1 Red Pepper
  • 100g sweetcorn
  • 250g pouch microwave basmati rice
  • 150g plain yoghurt
  • 15g coriander leaves

Our 30 minute recipe

  1. Marinate the chicken

    Heat the oven to 220C/fan 200C/gas 7.

    Mix the PERUVIAN SPICE RUB with 1 tbsp of oil in a small glass.

    Make slashes in the chicken thighs on both sides then put them on a lined baking tray and marinate them with the oil and spice rub on both sides. Bake in the oven for 20-30 mins, or until cooked through. 

  2. Prep the smoky spicy rice

    Heat some oil in a pan over high heat then fry the red onion and the red pepper for 4 mins.

    Add the sweetcorn and the SPICY RICE MIX and stir well. Reduce the heat and cook until the veg has browned a little, stirring occasionally.

    Add the rice (from the packet, no need to pre-heat) along with 1 tbsp water and stir fry for 3 mins. 

  3. Make your green sauce

    Mix the GREEN SAUCE SEASONING with the yoghurt in a small bowl, then add the coriander. Mix well, and keep aside. 

  4. Serve!

    Serve the chicken and spicy rice and a dollop of green sauce on the side.
