- large carrot
- celery stick
- tin haricot beans
- cooking chorizo(optional)
Our 20 minute recipe
Heat 2 tbsps of oil in a wide, lidded saucepan over medium-high heat. Then add the onion, carrot, celery, chorizo (optional) and Garlic Paste stirring intermittently for 5 mins. Meanwhile, pre-heat the grill to high for the pork in step 3.
Add the passata, Chorizo Paste and beans to the pan, mix well and bring to a gentle boil. Then cover with a lid, reduce the heat to medium-low and simmer for 8-10 mins. Meanwhile see step 3.
While the cassoulet’s simmering, sprinkle half of the Chipotle Rub on to one side of the pork chops and put under the grill for 3-4 mins. Carefully turn the chops over and sprinkle the rest of the Chipotle Rub on the other side and grill for another 3-4 mins.
Divide the cassoulet beans between 2 plates and top with the pork chops to serve. Get stuck in!

We swapped the beans for green lentils and the celery for Pak Choi and this was absolutely amazing (only because one of us doesn't like beans and the other doesn't like celery) - would highly recommend

Pork was nice. Carrots should of been instructed to par boil - didnt feel the chorizo worked at all with the dish. First dish I haven’t enjoyed from Simply Cook. Disappointed.

I've just cooked this and it was excellent. The only comment I would make is that it lacked "colour" on the plate and wondered if anyone could suggest some other vegetables to serve as a side order to just colour the plate? Devon

As usual, a bit short on vegetables. I skipped the celery and onion (I'm not a fan of either) and went large on spring onion, carrot, peppers and both types of beans. Flavours were fantastic, I'll definitely be making again. I'd say homage to cassoulet rather than authentic, but a very good approximation
