Spiced Quinoa & Feta Salad3.5/5 (BASED ON 2 reviews)
Quinoa (just say keen-wa) is hip and trendy but also very healthy. It's versatile, takes on the flavours it's cooked with, and is high in fibre, iron and protein. What's not to love? Quinoa has become a valid alternative to rice but it has been a staple food for thousands of years in countries like Peru, Bolivia and Ecuador. In fact, the quinoa you'll buy for this salad is most likely from one of these countries! You might wonder why you can't buy British quinoa, that's because it grows well in regions where it's dry and cool, like the Andes but unlike Britain. With sweet cinnamon, zesty orange peel and salty feta cheese, this gluten-free Quinoa and Feta Salad is bursting with flavours and nutrients too...

Stir the 400ml of stock into the quinoa, bring to the boil, then gently simmer until the stock has evaporated and the quinoa grains have a white halo around them.
Take the pot off the heat and stir through the crumbled feta cheese, flaked almonds and Zest Seasoning.
Then serve with the optional parsley and fruit scattered on top if you like.
