This colourful salad bowl is our take on the cuisine of Santa Fe, New Mexico - fresh flavours featuring (mild) chilli peppers in a fusion of Mexican, Spanish and South Western style food. The chilli (or "chile" as they have officially recorded their preferred spelling) is this state's largest agricultural crop and features in most of their dishes. Waiters in New Mexico will ask you "red or green?" referring to red or green chilli when you order a dish. If you'd like both, you reply with "Christmas"!

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Ancho Chilli Rub pot, a Grilled Pepper Mix pot and a Cilantro Salsa Blend pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Santa Fe Chopped Salad in just 25 minutes.

Your shopping list for 2 servings:

  • 2 sweet potatoes
  • 3 peppers (different colours)
  • 1 avocado
  • 2 tomatoes
  • 1 small red onion
  • 1bag of salad
  • any other salad items (optional)

Our 25 minute recipe

  1. Season the sweet potatoes

    Heat the oven to 200C/fan 180C/gas 6.

    Drizzle some oil over the sweet potatoes then toss them with the ANCHO CHILLI RUB on a baking tray.

  2. Prep the peppers

    Toss the peppers with 1 tbsp oil and the GRILLED PEPPER MIX on another baking tray.

    Put both trays in the oven to cook for 20 mins, giving both trays a shake halfway through.

  3. Meanwhile, make the salsa

    Mix the avocado, tomatoes and onion in a small bowl with the CILANTRO SALSA BLEND. Keep aside.

  4. Dress the salad

    When the roasted veg is almost done, lightly dress the salad leaves and any other salad items you're having with a little olive oil and salt and pepper and serve into bowls.

  5. Serve

    Arrange the sweet potatoes and peppers on top of each portion and serve with the hot salsa alongside.
