This vibrantly flavoured salmon rub was designed with inspiration from SC's resident Norwegian, Halvor, who introduced us to this blend of ingredients. We've paired the salmon with refreshing dill pickled cucumber and the famous Swedish “Hasselback” potatoes, named after the Hasselbacken restaurant in Stockholm, where this style of potatoes was first prepared in the 1700s.

We’ve sourced and blended all of the unique flavour ingredients to make our authentic Scandi Style Salmon. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Scandi Salmon Rub pot, a Dill Pickle Mix pot and a Hasselback Potato Seasoning pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Scandi Style Salmon in just 35 minutes.

  • 400g baby potatoes
  • 1 cucumber
  • 2 salmon fillets
  • 2Tbsp creme fraiche
  • 2 cooked beetroots (optional)

Our 35 minute recipe

  1. Prep the potatoes

    Heat the oven to 200C/fan 180/gas 6. 

    Put a baby potato on its side and make a couple of cuts a few millimetres apart. Don't cut right through, just 3/4 of the way down. TIP: Put potato on spoon to stop you going right through it, hold down on board and make slices)

    Toss them with oil and the HASSELBACK POTATO SEASONING on a baking tray, then roast for 25 mins. 

  2. Ribbon the cucumber

    Meanwhile, peel long strips from the cucumber (discarding the skin), twisting it when you get to the seeds. 

    Put the DILL PICKLE MIX in a bowl with 1 tsp of water and mix well. 

    Add the cucumber strips and beetroot slices (optional) to the bowl and toss to coat. Keep aside.

  3. Bake the salmon

    Sprinkle the SCANDI SALMON RUB over the salmon fillets and press it into the tops and sides (see tip).

    When the potatoes have had 20mins, shake them and make some space for the salmon on the tray. Then put the potatoes and salmon into the oven for 8-10 more mins or until the salmon is cooked to your liking.

  4. Serve!

    Serve the salmon and potatoes with the pickled veg alongside, and a dollop of crème fraîche for dipping.
