It might sound like a vegetarian twist on an old favourite, but instead of veggie mince and mash, we've taken it to another level by sauteeing colourful vegetables and seasoning them with a bit of Southern attitude from our signature Cajun blend. Our twist on the topping sees sweet potato mash spiked with red pepper puree for extra depth, which complements the tangy filling and savoury crumbled feta sprinkled on top.

- sweet potatoes

- feta cheese(optional)
- green veg of your choice (broccoli, green beans)(optional)
Our 25 minute recipe
Make the mash
Heat oven to 200C / fan 180C / gas 6.
Bring a pot of salted water to the boil and then add the sweet potatoes and cook for 15 mins, or until tender.
Fry the veg
Meanwhile heat the GARLIC OIL in a frying pan over medium heat, then fry the onion for 3-4 mins.
Then add the red pepper and courgette and stir fry for 4 more mins.
Add the Cajun flavours
Add the kidney beans and CAJUN SEASONING along with 1 flavour pot full of water, and cook for 2 mins.
Once all of the veg is cooked, tip it into an ovenproof dish and scatter over half of the feta cheese.
Bake the pie
Drain and mash the sweet potatoes, then stir the RED PEPPER STOCK through the mash.
Spread the mash on top of the veg and sprinkle with the remaining feta, then bake in the oven for 10 mins, or until it's slightly golden on top.
Meanwhile, prepare your greens, if having.
Serve up two portions of pie along with greens.
