Sichuan Dan Dan Noodles has been a classic dish on the streets of Chengdu for decades. The noodles are named after the pole that the walking street vendorscarried (dandan) when selling this dish with two baskets of noodles and sauce attached at either end. Rather than the traditional broth style dish, ours is more likethe American Chinese version of Dandan noodles where tender boiled egg noodles are topped with crispy pork with a slightly smoky and spicy chilli oil drizzle.

We’ve sourced and blended all of the unique flavour ingredients to make our authentic Sichuan Dan Dan Noodles. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Chilli Oil Mix pot, a Noodle Base Paste pot and a Sichuan Paste pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Sichuan Dan Dan Noodles in just 20 minutes.

  • 350g pork mince
  • 1Tbsp honey
  • 4 spring onions
  • 2 medium egg noodle nests (GF noodles if necessary)
  • 200g tenderstem broccoli
  • sesame seeds/sesame oil (optional)

Our 20 minute recipe

  1. Make your own chilli oil

    Gently toast the CHILLI OIL MIX in a large pan (with no oil) for 40 secs, taking care not to burn the spices. Then add 4 tbsps of oil. Stir for 20 secs then pour it into a small bowl and keep it aside as your chilli oil for later. 

  2. Cook the pork mince

    In the same pan, fry the pork mince in some oil for 2 mins over high heat.

    Add the DAN DAN STOCK pot and fry until the pork is crisp and brown (see tip!).

    Add the SICHUAN PASTE and 1 tbsp honey and fry for 2 mins.

    Stir in the spring onions, then turn the heat off. 

  3. Boil the noodles and veg

    Boil the noodles in a separate pan for 3 mins.

    Add the broccoli to the noodles and cook for 4 more mins, or until both are tender.

    Drain the veg and noodles then add to the pork. Turn the heat back on to medium and mix it all up. 

  4. Serve!

    Serve the noodles with your chilli oil drizzled over. Sprinkle with sesame seeds and a drizzle of sesame oil (if using).

You need to chop the broccoli much smaller to get it to cook in 4 minutes! Unsure about broccoli in the recipe at all really, I think I'll probably use peppers instead next time.
