Kedgeree actually came to Scotland as a concept, brought back by British Colonials from India in the 1300’s. Commonly enjoyed at breakfast, we enjoy it at any time of day!

Our 30 minute recipe

  • 1.

    Preheat the oven to 200C/fan 180C/gas 6. Pour 400ml of boiling water into a jug and add the Kedgeree Stock. Mix well and put aside.

  • 2.

    Heat 1 tbsp oil in a lidded, oven-proof pan over a medium heat and fry the Lemon & Pepper Mix for 30 secs. Stir in the rice and frozen peas.

  • 3.

    Sprinkle in the Curry Blend and stir-fry for 1 min. Pour in the stock, mix in and bring to a simmer over a medium heat. Lay the haddock on top, gently pushing it into the stock. Cover with a lid and cook in the oven for 25 mins.

  • 4.

    Meanwhile, hard-boil the eggs in a pan of boiling water for 8 mins, then remove and peel them under running cold water, for ease. Feel free to taste-check to see if the rice is close to being cooked after 20 mins. Add 50ml more water if it looks too dry (all ovens are different!)

  • 5.

    Remove the kedgeree from the oven and leave to rest for 2 mins with its lid on. While waiting, cut the eggs in half. Remove the lid, add the spring onions and mix gently, flaking the fish a little bit as you mix it together.

  • 6.

    Divide the kedgeree between 2 serving bowls, top with the eggs and garnish with coriander leaves, if using.

Great dish but needs more time in the oven than states in the method, for me it was around 40 mins for the rice to be soft enough, but this does mean that the fish should be added later during the oven cooking time otherwise it will be overcooked.
