Our Indian spiced fish rub is the star of the show here with 13 different ingredients in it from lemon peel to cracked green peppercorns to nigella seeds. We’re pairing it with some charred roasted cauliflower and a creamy pan sauce to drizzle over the crunchy fish and veg. 

Cook our delicious South Indian Salmon in just Minutes

We’ve sourced and blended all of the unique flavour ingredients to make our authentic South Indian Salmon. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Roasted Veg Seasoning pot, a Keralan Pan Sauce pot and a Nigella Seed Rub pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious South Indian Salmon in just 30 minutes.

  • 300g cauliflower
  • 250g baby potatoes (smaller is best)
  • 2 salmon fillets
  • 1 large shallot
  • 150ml creme fraiche
  • 150g spinach (or any other green veg) (optional)

Our 30 minute recipe

  1. Roast the vegetables

    Heat the oven to 200C/fan 180C/gas 6.

    Toss the cauliflower and potatoes in some oil on a baking tray with the ROASTED VEG SEASONING and cook in the oven for 20 mins. Meanwhile, continue with step 2.

  2. Make the sauce

    Heat some oil in a pan over medium-low heat and fry the shallots for 6-8 mins, or until golden.

    Add the KERALAN PAN SAUCE and 50ml water and stir well for 2 mins over a medium-low heat.

    Add the creme fraiche and cook for 2-3 more mins, so it thickens slightly. Turn it off and keep warm.

  3. Cook the salmon

    Sprinkle the NIGELLA SEED RUB over the salmon and press it into the fillets.

    Once the veg has had 20 mins, put the salmon on the same tray and cook in the oven for 10 more mins.

  4. Cook the spinach

    Just before the salmon is done, fry the spinach in an oiled pan for 2 mins, until lightly wilted.

  5. Serve!

    Serve the salmon and veg with the sauce drizzled over.

I swapped the salmon for chicken breast, and the cauliflower for mixed roast vegetables (parsnip, carrots, onions). It still worked, the flavours and the sauce were delicious.
